maybe you took to big of a bite and it scratched your throat on the way down

You probably irritated your throat when you swallowed the cookie. It will heal itself.
Next time, drink some liquid before swallowing something that's dry like a cookie or toast.

In Chinese medicine, this is called Plum Pit Syndrome because it feels like there is an actual pit there.
It is usually due to stress.
There are Chinese herbs that relieve it, but the main issue is to relax, perhaps a glass of wine if appropriate.

(Any guilt about eating that cookie?)

Nothing could still be stuck there. Certainly you have eaten and drank since the cookie yesterday....?

You have irritated the area. It happens. Trust me, nothing could be stuck there. It would have disintegrated and passed through the digestive process many, many hours ago on it's own.

It be better to drink something with your cookies. If you have scraped some tissue in you throat it can have this effect but, you should be fine in a few days.
