In college we met and hit it off great, He's 100% italian and I am West Indian/Venezuelian aka Black. His mom/dad/sister are okay with me, BUT the rest of his family can never know about me; which HURTS! Why is this so and if he loves me shouldn't care what extended family says. Right?

I'm Italian too and I date black girls and I have the same problems with my family.
A lot of Italians don't like blacks that much. It's not a deep, evil hatred towards blacks like some of the KKK or something, it's just a general dislike or suspicion of blacks.
The only thing you can do it to stick by him and try to show them that you are an intelligent, caring woman who knows how to take care of her man.
Learning how to cook well and knowing how to dress fashionably will probably not hurt either, since Italians have a strong sense of fashion and a strong sense of family.

That's a toughie because Italian Family influence/ties are the Last Word. Hopefully they will soften over time but basically, your love and hope for a future with this man don't stand a chance. I am sorry to sound pessimistic but it really is true- it's their culture (very insular) and they probably will never accept you as a serious life partner for their son.

exactly and you shouldn't care what anyone thinks. my girlfriend is hispanic and I am white my mom is extremely prejudice but I don't care she doesn't pay my bills.
color doesn't make me happy or love me it's the person inside the skin and I love my girlfriend with all my heart. We also get strange looks from many people around here because I am near the mexican border and people here aren't use to seeing a 6ft 2in tall white guy with a little hispanic women with 2 hispanic children. I just smile at them and go on my way.
Girl if your happy with who your with and he treats you good that's all that matters good luck

If you are dating with the posibility of marriage in the future, then I would look elsewhere. If his family can never know about you, that is telling you right there that his into you for now; but he sees no long term commitment with you.

Italians want to keep there bloodline in tact. That's why you will never really be accepted into the entire family. They will hate him too.
