Like sugar and salt are for taste, what is the reason eggs are used in cake, cookies, bread???

They are used as a binder to hold all the other stuff together.

As you may know, water and oil don't mix. This is where eggs come in. The protien in the egg is able to break down the bonds in oil and water and allow them to mix. This allows your mix to, well, mix together so that it is a good consistency and will bake properly.

It's a binder. Kind of like making meatballs or meatloaf. Something has to hold it together.
