I know people that don't refrigerate their butter. Sure it makes it easier to use when it's soft, but shouldn't it be kept cold? I mean it IS a dairy product!

Yep...it's safe to keep butter unrefrigerated on your counter. One of the things that will make butter rancid is oxygen...so it's a good idea to keep it covered. I recommend a French Butter Dish actually...they work great...check out what they look like -

Butter is safe to leave at room temperature. I was raised in Ft. Lauderdale, Florida. My mother NEVER refrigerated our butter. The only thing i have ever seen growing on a butter substance was mold from something that had contaminated the butter!! Be rest asusred you are save with eating butter that has left out!!

Yes it is safe to leave butter at room temperature. Don't you see in recipes where it actually says to use room temperature butter:) It just softens the butter..

Yes it is safe to leave butter out at room temp and as a chef i leave the butter out all days because it brings out the flavor as opposed to cooking with butter straight from the fridge it is very bland in flavor.

I have worked in restaurants for years and most of them leave the butter out all the time. The fat preserves the butter.

If it concerns you about leaving butter on the counter, I buy the tubs of margarine. They are kept in the refridgerator and is easy to spread when ready to use. I hope this is helpful.
