Sushi or sashimi grade fish (which is the same thing) can be purchased frozen or thawed. In fact, many restaurants purchase their fish frozen for convenience. Sushi (sashimi) grade fish refers to the way that the met has been handled as well as its quality, so it makes no difference whether it arrives frozen or not. As a previous poster mentioned, all fish intended to be eaten raw (excluding tuna, either ahi or maguro) is required by the FDA to be frozen at some point to kill parasites. Ahi or Maguro is also often frozen, though, even though it is not a federal requirement. Sometimes it is just not thawed before being purchased by restaurants.

Is this the packages I see at Wal-mart? I purchased some beautiful ahi tuna steaks frozen once. They were vacuum sealed in carbon dioxide to look bright red? To answer this question, I'd recommend you meet everybody half way. Try "tuna-tataki". That's just as popular in Japan as sashimi. It's simply thawed tuna pan seared for a minute on each side. The inside should be raw. Then simply slice them with a sharp knife and place on a plate.

I would never use frozen ahi or anything else frozen for sashimi. It needs to be fresh!

almost all sushi fish is shipped frozen, so yes.
