They use oregano in my area. Fresh - with some olive oil... "Italian Butter" yum!

My family owned an Italian restaurant for 35+ years.
We put basil, oregano, marjoram, finely chopped fresh garlic and just a squeeze of lemon juice.

Depends on the restaurants. I'd say basil, oregano, or rosemary.
