I am making veal parmigiana for me and pasta with vegetables for my wife. She is a vegetarian.

Take 4 cloves of garlic & mash them (you can use a food processor or a mortar & pestel sorry my spelling sukcs)
add salt, oregano, & a little bit of olive oil..make into a paste

Rub the paste all over the chicken breasts (you may want to cut soem slits in the chicken to get seasoning inside)

Put in a baking dish with half a cup of white wine & a tablesppon of lemon juice (this part is optional... I just love how juicey & tasty it comes out) Cover with tin foil...make sure the tin foil has a corner up or a a slit in the middle to let the chicken breath!

Bake for 15 minutes at 350 degrees...check on it..turn it iff you want and cook for another 15 minutes

Serve on top of plain pasta or on the side of rice pilaf

Chicken Stuffing Casserole
8 Chicken breasts
Mix 2 cans of cream of chicken soup and 1/2 Cup of milk
Put a slice of swiss cheese each peice of chicken then pour the cream of chicken mixture over it. Then top it with Chicken flavored stove top stuffing. Pour 1 Cup opf melted butter or margarine over the whole thing and bake at 350 for 30-45 minutes. SO GOOD!!!

Here's a simple oriental dish that my kids love and is good for them. This works well for beef or chicken.

You will require:
Rice, beef sliced thin or chicken chunked, bag of assorted vegetables (broccoli, snap peas, carrots, ect, stir fry works best) bottle of sauce ( http://www.mirrotek.com/Merchant4/merchant.mv?Screen=PROD&Store_Code=MS&Product_Code=FS14GT&Category_Code=IronChef ) found in the Chinese section of the store, bamboo shoots, water chestnuts, baby corn, what ever you like....

Start the rice. Brown the chicken or beef till cooked in a pan or electric fry pan, remove when done. Add some oil to coat the bottom of the pan, add veggies, cover cook till almost done.

Add the meat, cover with sauce to your liking, cook on low for a minute or two and serve over rice.

Kids like the baby corn, and you can add or take out according to your tastes. Other veggies that can be added are green and/or red bell peppers cut in strips or chunks, straw mushrooms (in the oriental section) chow mein noodles, red pepper flakes, ect.

One of the coolest recipes ever...and it tastes pretty good.
get one pack of chicken breasts, cut them into stips.
in a large skillet mix a can of pepsi and a cup of ketcup than add the chicken and boil on a med heat for about 45 mins covered. then take lid off to help thicken up. its basically an easy bbq chicken recipe but healtier.
