Jalapenos on Culver and Barranca (right by Big 5 and Albertsons)
Alejandros - 2 locations off of the 405 on Brookhurst (I know it's a bit of a drive, but the one that is further north is open 24 hours, which is non existant in Irvine, where everything closes at 9!) One is on Slater (I think, right by KFC) and the further one is... I forget the name, but the signs are bright yellow and there are always tons of people there, so you can't miss it! Sorry, I haven't been in that area in years, but those were some of my favs when I was in college.
La Salsa also on Culver and Barranca (if you want to go the healthier route).

Honestly, skip the Mexican Restaurants in Irvine, unless by "good" you mean "sanitized for gringos". You will find *much* better mexican food in Santa Ana. Just be kinda mindful of the neighborhoods you go into, as it can get a little sketchy, but you'll find great food. If the sign isn't in english, its a good start.

There is a little known restaurant with a good atmosphere on the corner of Culver and Walnut...I don't remember the name but it's next to a Seattle's coffee in ther corner.

El Torito Grill on MacArthur and Main is pretty good.
