I couldn't add an answer to the already closed question, so I re-opened the question again. It seems that people think it is safe to eat the potato skins.... Not necessarily so.

Can you eat potato skins?

It is a known fact that potato skins do contain many nutrients absorbed from the soil. However, the potato skin also absorbs pesticides as well.

Additionally if the coloring of the skin is green, it is a mild toxin.

Hence, Enjoy Potato skins if the are organically grown without pesticides and if they are not green.

I've eaten potato skins all my life and never had a problem. Not that they are part of every meal, but generally when I have a potato, I eat the skin. This includes russets, gold and blue potatoes, all kinds. I wouldn't worry too much.

Even if there is a bit of green on the potato it will not harm you. You'll notice every once in a while, you'll get a hint of green in a bag of chips. Don't freak out over it! Yes, it is toxic, but you have to eat large amounts of green potato to get sick... I forget the exact amount, but if I remember back to my cooking classes, it's some amount that isn't even humanly possible for the average person.

Yes you can eat the skin. BTW, next time buy red potatoes that are more fresh, but all potatoes will have "eyes."

Yes you can eat. Infact all nutrients will be there in the skin, not just potatto, any vegtable or fruit, you need take with their skin(exception are there like punpkin & jack fruit and so on0, also avoid boiling and deep frying, because it will destroy nutrients, you will be left with remaining dust( i mean useless portion).

Ok... save for the idiots who eat potatos that are rotten, or contaminated by pesticides (which aren't allowed to be SOLD.), potato skins are the healthiest portion of the potato.
They are 100% safe to eat, and no more dangerous to eat than the flesh of the potato.
