What is it called when people write most things in capital letters

Using capital letters is 'writing in majuscule'. The opposite, writing in small letters, is 'in minuscule'.

You will also hear capitals called 'upper case' and small letters called 'lower case'. This goes back to the days of hand-set type. The small letters were used more often, so the printer had his stock of those in the lower case so he could reach them easily. The capital letters were in the upper case and out of the way since he didn't have to use them as much.
