To do it easily you need a natty piece of software that can work within photoshop called 'fluid mask' which works like magic but is quite expensive ...otherwise you have to do the best you can painstakingly eradicating the background using the special erase facility on your photo handling software (usually with mixed quality results)
Here it is I just went and found it;
http://www.vertustech.com/
you can get a free trial BUT you can't save' the results...it does let you find out if it is right for your job though!

In PhotoShop is easy: with the lasso select the area you want to preserve; copy and paste to create new layer.
Now create another empty layer and place or create the background you like.
Be sure the selected image you cut is in top of the newly created layer in the palette.

Before digital manipulation.... we used to cut it out! Re-shoot the foreground on whatever background we wanted to use, and using touch up brushes to blend in on the print!!!
Either that lasso it out, magnifying as much as poss to keep it close to the subject. Using Photo-shop or similar, it just takes practise and patience.
