Well, the sell-by date on the jug is really a statement to the store selling it that that particular jug of milk needs to be sold on or before that date otherwise the milk must be taken off the shelves because it would be no longer safe to drink by time the consumer uses it. The date doesn't mean you should throw away the milk the day after the sell-by date, it just means the store can no longer sell it at full retail ( and in some places, they can't sell it at all).

I've had milk that stayed safe to drink a week and a half past the sell-by date. The safety of the milk in your fridge is mostly determined by how well the temperature is maintained. In grocery stores milk is held in refrigerators that are constantly being opened and closed so they don't maintain their temperature as well as your home fridge, so milk can spoil faster in groceries.

It's when stores can no longer sell the milk to consumers... but really... the milk is good for up to a week after the date on the carton

This is the sell-by date - the last day that stores are legally allowed to sell milk. It is generally good for a few days beyond this date as long as it has been kept refrigerated.

It means the date it should be used by before it goes rancid........... however I know from bitter personal experience that it's only a rough guideline, especially in the summer as I've had it go off 2days earlier than stated on the packaging on a few occasions

It means you have to drink the milk before that date. But sometimes they get the dates wrong.
