An old man that I worked with was recently diagnosed with a terminal illness. At his request, I made him a promise that when he died I would turn him into a mummy. He is now close to death. When he dies, how should I mummify him?

Take him to a university if you want the job done right. First you have to remove the internal organs, scramble the brain and drain it through the nose, pack the inside and outside of the body in salt for a month or so, and then start the wrapping.

Good luck.

It would be illegal for you to do this on your own authority,it involves draining away all the blood and removing the major organs, then an embalming fluid must be used to preserve the body, and this is very important, the remains must be stored in a very dry atmosphere and a grave would not do because of moisture.

It is done by removing water content of the body. This stops the activity of micro-organisms in the body and hence the decomposition.
It could be done by freezing and smoking the body. Ancient Egyptians did it by removing the internel organs and filling that place with nitre. Nitre absorbs water

Well, as far as I know, you have to remove his organs, ( place in sacred jars for safe keeping: this includes the brain as well)
drain all blood, wrap his body in strips of cloth and place his wrapped body in coffin ( or sarcophagus).
