Macallan (18 0r 25) on special occassions - it is expensive, but well worth it and on the top of the list. On all other occasions, Johnny Walker Black Label served on the rocks- I enjoy the aroma and the charcoal taste.

Glenfiddich is real nice. But since I'm just a working man, and not in the right tax bracket to keep Glenfiddich stocked in my house, I tend to go for a nice blended Scotch. Chivas Regal 12 is my pick.

I'm a little curious about the scotch that isn't "peaty." Isn't that what distinguishes scotch from Irish whiskey & bourbon & makes a scotch drinker a scotch drinker? That's precisely why I like scotch over bourbon.
As for me, I have an 18 yr old Talisker which is great, but have really enjoyed the 12 yr old Oban when I tried it.

There are a number of good ones. Glenfiddich is quite good, and so is Glenlivet 12.

Macallan single-malt highland scotch is very nice and smooth. It's too good.

Macallan. 12 years is good, 18 better, 25 superb (and expensive).
