I can't say Minehead itself is my favourite seaside town - it's suffered a bit from the rise in foreign holidays. However, Dunster is very close (5 miles or so) and the castle there is supposed to be very pleasant. You can ride there (and indeed all the way to near Taunton) on the West Somerset (steam) Railway if you like.
Where's good to visit depends what you like - and I hope you wouldn't have to drive for 3 hours to find something! You'll be on the Eastern edge of Exmoor, which is nice in itself if you like your countryside wild and remote (for England), with interesting little villages like Dulverton and Bampton to explore.
You can drive round the north side of the moor, stopping at Lynton or Lynmouth for a Devon Cream tea, and visit Arlington Court, which houses the NT's collection of horse-drawn carriages. While you're in the area, have lunch in the Mason's Arms in Knowstone, the best pub in North Devon, or try the beaches at Woollacombe and Croyde which are good for families and surfers.
Drive back along the A39 through Bridgewater, cross the M5 and head for Glastonbury with the ancient Tor and its links to Arthurian legend (maybe). While you're there, try discount shopping in Street or visit the small but pretty cathedral city of Wells. Within easy striking distance are Bath (Roman remains, and the baths themselves of course, in a stylish city), and Cheddar Gorge and Wookey Hole for geological interest.
Get on the M5 northbound and in another half hour you'll be in Bristol - with its zoo, Brunel's SS Great Britain and his masterpiece Clifton Suspension Bridge, and the @Bristol exploratorium.
Or head south and in about another 40 minutes be in Exeter, which has a nice cathedral and is a good base to visit great beaches at Exmouth or Dawlish, or Dartmoor in case Exmoor wasn't pretty enough for you.

Crealy at Exeter is a good day out for kids.
In North Devon there are a couple of great farm based tourist attractions that are worth a visit the Big Sheep at Abbotsham and the Milky Way at Clovelly both near Bideford. The best of the two is the Big Sheep it's great fun and a very silly day out based on a sheep farm and it has a great indoor play area.
Otherwise you are close to Exmoor which is great for walking and picnics and there are plenty of beaches around the area.

Lynton & Lynmouth, bout 1hr away.. got a water pwered mountian railway,, Ilfracombe,, Bit further round
About 2- 2.5 hrs is Tintagel.. King arthur & all that,,, (Follow A39 towards BUDE..< Tintagel just a bit further down

Once u get into Butlins u won't have time to travel anywhere else. There is so much to do so just enjoy urself there instead!

If you fancy a walk, go into the village and have a cream tea in the tea shop there. All home made food and you cant beat it!!
