Because we live in a society of sheep. Somebody only ever said knife and fork, and it caught on. Now it makes you look daft if you say fork and knife. Note: say your kids (or anyone else's kids) names, and note that there is always an order in which they are said. It's one of the patterns instilled in us as children, that we probably cannot break, and if we did, it would cause chaos. Apparently, that's a bad thing.

Perhaps since English has roots in both Norse and German it sounds better to have a harsher consonant at the end, the -rk at the end has a feeling of finality, whereas knife is quieter.

Because in UK, before the 18th century, we only used knives. Forks were used before 1000 in the Middle East and by the upper classes in Italy shortly afterwards in 11th century too, France by the 17th century but we were a bit backward.

Maybe they are said in order of necessity.
Can eat a meal with just a fork but kind of difficult, depending on what you are eating, to eat with just a knife.

Because most people are right handed and therefore hold the knife in their right hand. So we refer to it as knife and fork not fork and knife.

It's because the majority of people are right handed and the knife is used in that hand, therefore it comes first!
