Some people love to challenge themselves and feel a sense of achievement at overcoming obstacles.
I'm indifferent, it doesn't really matter to me that someone has climbed a mountain or sailed the world. It's the person not their interests that would interest me.

The answer that immediately occurs to me is that these people want to challenge themselves. Most of these situations are "us against nature" scenarios where strength and wits both count for a lot. I'd say some men would love a woman who'd do things of this kind. Others would be put off and intimidated.
