Coming from Mexico, it will take a really long time for your fiance to actually get the K1 visa granted.
It will be much better and faster, if she comes to the US (even if she does illegally), get married ASAP and adjust status. The government usually forgives most overstays and illegal entries when married to a U.S. citizen.

Go to this link and become informed on the K-1 visa process and then call these people. Telephone calls for advice is free. If I were you I would hire these people to help you through the whole process. This is a demanding process, which there are no shortcuts to. Please the immigration service will not even process your documents if it is not done properly and correctly. These people are professional and are outstanding and are very good.
