1. A funeral consists of the mass, then visiting the grave. It's a normal mass, except the homiley is the priest talking about the deceased instead of a lesson of the day.
2. Sex outside of marriage is frowned on, but it happens. It's supposed to only be between a husband and wife. I am saving myself for my husband, I know people who haven't. Some priests and parishiners are uptight about it, some aren't. The times are changing.
3. Eating fish on Fridays is an old custom from Vatican 1. I'm not overly sure the significance of it (I was raised after Vatican 2), but it was because meat wasn't supposed to be eaten on Fridays. Again, some still do this, most don't.
4. The Confession is very simple. You go in, tell the priest how long it's been since your last confession, list your sins, say the prayer on the wall (no one has it memorized anymore), get told your penance, do your penance (mostly prayers) and try to not repeat your sins.
5. I only went to Catholic school for one year, so I can't answer that. I was tramatized from the year before with an abusive teacher, so I wasn't open to learning.
6. It's again, VAtican 1. Women used to have to cover their heads with veils in the pressance of the Lord. We don't have to anymore, but men do still have to take their hats off in church.

A Catholic funeral is "the Mass of Christian Burial". It has all the same prayers as any other Mass, including the consecration of the Eucharist, just as Christ did at the Last Supper, and then commanded, "do this in remembrance of Me". Catholics have obeyed that direct command of God ever since. So, important spiritual events like baptisms, marriages, ordination of priests, funerals, etc. usually take place within the Mass. In a funeral Mass of course, in addition to the usual prayers of the Mass, special prayers are offered for the deceased before taking the body to the cemetery, where a short additional service is performed at the gravesite.
It isn't a matter of "eating fish on friday". It's a matter of abstaining from meat on Friday, a form of fasting, as recommended in Scripture. For many years Catholics were required to do so every friday of the year. Now we are only required to do so on the fridays of Lent and on Ash Wednesday. But there is no requirement to eat fish. Fish can be substituted for meat, but other Catholics may prefer to go vegetarian.
We confess our sins because Scripture and the history of the Church indicate that it is God's will for us to do so. Jesus breathed upon the Apostles, the first priests of His Church, signifying a special outpouring of the Holy Spirit, and then told them "whose sins you forgive, they are forgiven them". the Word of God tells us that Jesus gave priests the power to forgive sins in His name. But He did not give them the power to read minds, therefore sins must be confessed, or the priest would have no way of ministering the forgiveness of Christ because he would have no way of knowing what sins needed to be forgiven.
Catholic schools are among the best in the country. Compared with public schools, a much greater percentage of students from Catholic schools go on to college, and to the best colleges. This is consistently true, year after year.
Women covering their heads in church is an old custom, a gesture of respect for Christ, who is physically present in every Catholic Church, in the Eucharist. It isn't done much any more. But it was just a carryover from customs of the time. A woman always wore a hat when going to meet any important person. many cultures have similar customs.

wow lots of questions well catholics used to fast on fridays during lent but that was very unhealthy. then the went to no meat on fridays. now some catholics say its ok to eat chicken. which i dont really agree with. we can give up meat one day a week during lent. Jesus gave up his life for us after all.
