If the egg lies on its side on the bottom, the air cell within is small and it's very fresh. If the egg stands up and bobs on the bottom, the air cell is larger and it isn't quite as fresh If the egg floats on the surface, it it should be discarded. Also: A very fresh egg out of the shell will have an overall thick white which doesn't spread much and the yolk will stand up. Grade AA eggs are the highest grade available. They cost more than other grades, but may be a good choice because of their high quality and longer shelf life.

An egg is good if it sinks. A fresh egg is lighter and therefore floats.

Put it in some cold water. If it floats it is inedible. It means that the egg has dried up somewhat and that there is gas build up inside the shell. Open at your peril (and that of your neighbours).
If it sinks, it is okay. Remember that when you pick up fruit you would normally check it for weight for size. Heavier fruit means there is more juice in it!

Ships ,boats & like craft,float on water & they are best doing that,but when an egg floats it's not meant to do that,it's a bad egg,no doubt about it.

According to Delia 'where are ya!' Smith, a fresh egg sinks, if it tips up on one end it is getting old and if it floats it's bad. Let's face it no one likes a floater...

It will float if it's gone off. The air pocket gets bigger the older the egg gets.
