Its pretty easy even I can make a good veggie soup :)
Get a can of Swanson's Chicken or Vegetable broth. Its 99% fat free and some have less sodium.
Pour into a large pan or dutch oven.
Add whatever veggies you have on hand, the one I made yesterday had small carrots from a bag, 2 potatoes(peeled and cut), 2 zucchini(cut and sliced), 1 coarsely chopped onion, and simmer for an hour until the potatoes are tender. Add whatever seasonings you like I don't put any but my guy adds hot sauce and diced tomatoes and celery to his soups.
Basically use the soup stock, add your veggies. and put in your favorite seasonings.. and you will have soup within an hour!
p.s. if you want to add a handful of rice, barley or pasta that works too!

Start with veggie bullion (soup base) mix it as directed on the package, make enough to fill the size pan of soup you want about half way. Add carrots, celery and onions and let it simmer for at least a couple of hours on low heat (so it's just barely bubbling) when the carrots just start to get tender add your other veggies. (peas, corn, potatoes, kale, etc..) Let all that simmer for a while until it's all cooked. At this point if you want to add a little thickness to make it a more hearty soup you can add some tomato paste, add small amounts at a time and stir it in until you get the desired consistency. Or you can mix a couple of tablespoons of cornstarch in some cold water and add that. Make sure the soup is at a low boil and add a small amount of the cornstarch and water mixture stirring very well after each addition until you get your desired consistency.
Enjoy

Put water in a pot with a stock cube and lentils. Let simmer away. Prepare veg - carrots, onions, potatoes, celery (if you like it). Add bacon/ham. It's ready when all lentils have dispersed and soup is thick. Add salt and pepper to taste.

I was the same whenever I made homemade soup it was never tasty and was always quite bland then I learned that instead of using stock cubes use what is called Builon and low and behold my soup is now tasty and nicer than anywhere.
Builon is what all the catering/chefs use.
Not sure if that is the right spelling for it but its made by knorr especially for casseroles and soups etc

Well first cook a beef roast in water or beef broth, and tomato juice (the juice adds extra flavor) with salt and pepper until the roast is falling apart, take it out of the liquid and tear apart add back to liquid along with cut potatoes, carrots, wait a little while then add in corn, peas, green beans, because they take less time to cook. You can use whatever veggies you like, just take your time and try different versions. It will always taste good if you use good ingredients. Happy Cooking

I would start with sauteeing carrots and onions, when they are softened, add 3 cans of chix or vegetable broth, chop cabbage, spinach, add 1 can of green beans, garbonzo beans, I also like to throw in a can of diced (onion garlic) tomatoes. Let it cook till cabbage is soft. I didn't say how much of the vegetables because it all depends on how "thick" you like your soup.

I would use root veggies like parsnip, turnip, celery, carrots, tomato, onion, garlic. And use any herbs and spices that you like as well. If you use a larger pot then you need, add lots of veggies and don't fill it up with water all the way to the top you should get a nice stock. Then strain it and add fresh veggies like celery, carrots and potatoes.
