You should probably be eating more than 1000 calories a day. Doctors recommend about 1200 for a woman on a diet, and around 1600 for a man.

Breakfast

Oatmeal or other low-sugar cereal either without milk or with a small amount of skimmed milk. Try adding a banana or some grapes or a chopped-up apple for vitamins and nutrients. Otherwise, two eggs on a thin slice of wholemeal toast will provide lots of healthy low-fat protein.

Lunch

Keep the carbs down - not too much bread or pasta or rice. Try something like a grilled chicken breast with salad or vegetables, or a bowl of low-fat soup and a small wholemeal roll. Have a couple of pieces of fruit after lunch for the vitamins and to fill yourself up if you're still hungry.

Dinner

Much the same as lunch - some protein (meat or fish or beans and pulses if you're vegetarian), plenty of vegetables, and maybe a small amount of rice (brown) or a smallish potato or a slice of wholewheat bread.

Thats the diet im on, i consume around 1200 calories a day, and i include plenty of protein in my lunch and dinner...! and i loose 2-3 pounds a week!

1000 doesnt sound like enough....try 1200 to stay healthy

Very easy, fruits, veggies, tuna, tons a water and milk...either tuna or chiken breast...make sure to either boil your chiken or oven roast it. Easy...don't forget yogurt.. and agian water.
