Here are two recipes, both great. Try them as they are, then next time, try adding 3 TBL brown sugar mixed with 1TBL chopped pecans and sprinkle that on the bottom of the pie crust before you add the sweet potato mixture.
Using Canned Sweet Potatoes:
SWEET POTATO PIE WITH STREUSEL TOPPING
1 (23 oz.) can drained sweet potatoes, mashed
1 (14 oz.) can sweetened condensed milk
1 egg
1 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. cloves
1 (9 inch) unbaked pie shell
STREUSEL TOPPING:
1/2 c. brown sugar
2 tbsp. chopped pecans
2 tbsp. butter, firm
2 tbsp. flour
1/2 tsp. cinnamon
Mix sweet potatoes, milk, egg and spices until smooth. Pour into a pie shell. Mix brown sugar, flour, pecans, cinnamon and butter together. Blend with fork until crumbly. Sprinkle on top of pie. Bake at 375 degrees for 50 to 65 minutes.
Using Fresh Sweet Potatoes:
3 1/2 c Sweet potatoes, cook/mash
1/2 c Butter, softened
2 c Sugar
4 ea Eggs
1/2 ts Salt
1/2 ts Nutmeg
13 oz Evaporated Milk
2 ts vanilla
2 ea Deep dish unbaked pie shells
Instructions
1. Combine potatoes, butter, sugar and eggs, beating well. After each one, stir in salt, nutmeg, milk and extract. Pour into 2 deep dish unbaked, pie shells.
2. Bake at 425 for 20 minutes. Then lower oven to 325 and bake for 30-40 minutes longer.
