The 30-06 would be the better buy for general use hunting. It has a wider bullet weight choice. This allows you to hunt game as small as antelope without blowing the animal apart. The heavier bullets allow you to go after elk, moose and the smaller bears.
The 270 is a flatter shooting round but simply does not have the broad, overall use that the 30-06 has.

I have both and a .25-06 Remington. Why? Why not???
Seriously, I bought my .25-06 first and loved it. Then my .270 and found that with the 130 grain bullets it dropped deer just like my .25-06 so I re-zeroed it with the heavier 150 grain bullets and haven't used it since.
Then I bought a .30-06 because it was 'unAmerican' to not have one. It is a more versatile round in case I ever hunt something bigger than deer. But to answer your question, I suppose that if I were not to ever hunt anything bigger than Mule Deer I wouldn't need anything bigger than the .270 Winchester. However, if I were to be in Elk/Moose/Caribou country then the .30-06 is available in a wider variety of bullet weights for heavier, big boned critters.

I own one of each and I am more comfortable, in Montana, hunting with the '06. The .270 has taken game, up to elk in size for me, but I've also ran into grizzlies near Yellowstone National Park. The '06 (or in many cases .300 weatherby) are the ones that I'm comfortable betting my life on!

30-06. Same case, bigger hole. You can use the '06 on critters too big for the 270, and if you use them on the smaller game, the '06 isn't going to kill them too dead. And I have a 270WSM and 7mm and 8mm rifles, but no 30 cal., so it would fill a gap.

depends on the gun and what you want to do with it
i dont think you would be unhappy with either but depends on the game you intend to take. If target or long range go with the 270
i agree the 06 is a better all around cartridge.

I would say that the .270 is a caliber on the medium end of the hunting rifle. However if you want something for sniping...Hmm, the .270 does shoot flatter.
Dunno, personal choice. My father preferred the .270

270 rifles always hold there value, are just as good , Don't kick as much and shoot as far or farther.
