Its funny u should ask this coz Hindu is a religion and not a race/culture. it's like asking How does Muslims or Christians eat... which means generalizing that there is only one way to do so.
But i think u refer to the Indians with the Hindu faith (another major religion of Indians are Islam..and Indian Muslims generally eat with their hands too).
Indians that live in India itself or at some point originate from that particular country do consume their food by hand. However, most are still somewhat comfortable eating with fork and spoon just like anybody else. So i guess it depends in what situation they are in and the type of food they eat (noodles/spaghetti needs cutleries of course).

The ones I met ate it with knives and forks, at least in the Taj View hotel they did.
