Most people do it to shots to warm up the shot, there is a reason for this for most Licorice flavoured shots the flaming can enhance the flavour and make it more aromatic, it also creates a vapour that when u drink is more likely to hit your blood stream faster because the vapour goes straight to your lungs and hence staight to your blood stream rather than having to be absorbed by your stomach

Bars and Bartenders flame for effect, there is a slight warming but not significant as the glass will sshatter if it burns too long. Most drinks are flamed w/ 151 or other high proof liquors. On occassion some are flamed with a sugar cube soaked in a flammable liquid (lemon extract). Either way douse the fire before drinking the warmer the liquid gets the more alcohol fumes are released and the fire will flare. I have seen flaming shots spill on people and its not really fun.

The point of it is to warm up the shot and you drink it AFTER you blow it out (Carefully)
