Protein is made up of building blocks called amino acids. There are hundreds of them, we need over 20 in ourt diet because we can't make them. These are called 'the essential amino acids'.
Meat and cheese contain most of them and the ones they don't have are found in abundant supply in vegetables, so meat is called a 'complete protein'; because it contains all the essential amino acids.
Soya beans and Quinoa are the only vegetable sources of complete protein.
To eat properly as a veggie or vegan, you must mix beans and grains. Beans contain half the essential a.a.'s and grains contain the other half. So eating them together gives you all of them. This is called 'protein complemetary'.
Beans on toast is a complete protein; its got beans and the toast is made out of wheat grain.

Carbohydrates are found in grains and beans, also root vegetables and sweetcorn. So anything like bread, porridge, pasta and potatoes contain carbs. They're not really something oyu usually have to worry about getting enough of.

If you want to restrict your diet then you need to read up about nutrition, there are food groups such as protein, carbs, vitamins and minerals, fats, fresh fruit and veg; you need to eat a balanced diet that is made up of a percentage of foods from each group.
There are loads of websites that give info on nutrition, look for some of those.

Lentils - dhal/paruppu, Milk and milk products such as curd, paneer, khova etc; Soya bean and its products such as soya nuggets if you like them [I dont]. Sprouted pulses - mung, masoor, chana etc., are also a very good source of vitamins, minerals and proteins, very tasty too. You can have it raw [moong] in your daily salad, or cooked as in sundal, chhole, usal, misal and countless other regional variations. Nowadays alfalfa sprouts are available cheaply in supermarkets in metro cities. These are also very nutritious. Also try wheatgerm, wheat grass, available fresh and in powder / tablets.
