The only way I've ever been able to get the coconut meat off the brown skin is the use a vegetable peeler and peel out the coconut meat.

make a coconut slinger , top of coconut find the soft eye , open it with a steel needle , pour the coconut milk out in a glass , use the needle through the hole to mash up the coconut flesh, milk in glass add two desert spoons of brown sugar mix well, add a quarter tea spoon bakers yeast , mix well wait five minutes until foam on mix , pour back in coconut via a funnel, find a cork and bung up hole in coconut tie down with wire , leave two months, open pour and drink. brow skin is all that's left inside, but what a kickaboo joy juice

You do it the other way round and get the flesh off the brown skin.

I just did this today. It takes a little hard work but I find the vegetable peeler works best.

Use a vegetable peeler but be careful not to slip and cut your finger tips. I did, lots of blood.
