I have seen solid wood french style doors used in office buildings and such, I am sure they would be fairly easy to find for inside a home.
I have (going to the outside) french doors that have a double paned glass with blinds between the glass for privacy- I dont know if this is something you would want for your bedroom though, but it is an option.
here are some sites that may give you ideas and inspiration:

You can always special order any type of decorative glass that you want with most door companies.
You can follow any of the suggestions given.
I'm putting french doors in my bedroom, we get full sun where the windows of that room will be. I want to allow the light to filter into the living room. I'm actually hanging curtains on the bedroom side of the wall so that when I'm in the room I can close the curtains for privacy, but when I want to let the light in the living room I can open them and still have my doors closed if I prefer.
Let us know what you decide! Have fun with it, there are so many different alternatives to doing this.

French doors are beautiful. You can get them with different types of glass. Even home depot has on display the different types of glass panels that is available. If you get the plain glass, there is a finish that comes in a small jar, which is also available at Home Depot and Walmart and you apply this to each panel and this will make them tinted so you cannot see through them.

It's probably quite expensive but electrochromic windows sounds like what you want.
If I understand it correctly, they're clear but you can make them opaque by flipping a switch like a light switch.
see: www.glassonweb.com/articles/article/192
You can also get colored glass, plexiglass or fiberglass panels with wood or plastic partitioning that makes them look like glass panels.
