I've heard many people say that even being being properly wrapped and sealed, that it still tastes bad and dry.

Yeah, a year is a long time to sit in the freezer, and some icings just will not stand up to it. It's gross, but I would take a bite just to keep with tradition and reflect on the memories.

I've never heard of anyone actually eating their top tier. They usually just take a small bite. And grimmace as it goes down. Then, they trash it.

I couldn't eat mine. It was gross smelling and looking. We just threw it away and went out for dinner and dessert.

we kept ours for memories of the most wonderful day of our lives. we couldn't bring ourselves to actually eat the cake on our anniversary so we just threw it away :)

if you wrap it up correctly it wont freezer burn, but i think it is out of tradition and superstition. it is supposed to bring good luck to the marriage.
