It never said they had only 2 children. It said they had 2 sons. That doesn't include daughters. Also, Adam and Eve had a 3rd son, Seth, after Cain killed Able.
And yes, Seth and Cain almost certainly married their sisters. It was not against God's law to do this until the time of Moses (see Leviticus 18:6-18). Note that a number of people in Genesis did things that would have violated these laws had they been in effect (Abraham's wife, Sarah, was also his half sister ; Jacob's wives were sisters, and both were his cousins.) But God had not yet given a commandment against these things.
One theory I have heared is that the reason this was allowed in the beginning is because Adam and Eve were created perfectly, before the fall, and there were no genetic flaws in them. So early humanity probably didn't have to worry about the issue of inbreeding, even though they were all related. (Remember that Eve came directly from Adam, it may be possible that they were genetically similar, even almost identical).
But as fallen man continued down the path of corruption, genetically humanity accumulated corrupt genes (like genes that increase risk of cancer, or mental retardation, etc;). We all have some corrupt genes, but because we have 2 sets of each chromosome, the good gene on one chromosome usually becomes dominant over the bad one on the other. If two bad genes of the same kind are on each chromosome, then you have a potential problem. When two people reproduce, they each pass on half of their genes to their children, giving them 2 of each chromosome. If both parents have the same bad gene (say, from being close reletives), that increases the chance significantly that they will produce children with 2 copies of the same bad gene. And that is a bad thing.

On the black and white question, I will say they adapted to their climate- most creationists do believe in genetic adaptation, or "micro-evolution" (which isn't really evolution at all, just variation and adaptation, and cannot produce a new type of creature, just variations within that kind of creature). This is a scientific fact, unlike "macro-evolution" which is the evolution of new kinds of creatures. Adaptation and micro-evolution have been directly observed by scientists, while macro-evolution has never been directly observed, and never will be.
The two should not be confused, though, because there is a big difference between a few genetic patterns changing, and entire genetic structures changing to produce a new creature.

I really don't know about what the Bible says about that, but being a Muslim, Islam states that Adam and Eve had many twins. It was prohibited that two twins would marry each other, therefore some males had to marry older females inevitably.
We are not told what the skin colour of Adam was, but some scholars suggest he was black because he was "Adam" thus being created from the "adeem" (ie mud or clay) of Earth; therefore they took this as an evidence that he was black.
As for the races, Noah had three sons, Sam (Shem), Ham and Japheth. Sam is the father of the "white" race, Ham is the father of the "black" race, while Japheth is the father of the "yellow" race.
The white race includes: Western Europeans, Arabs, Israelites, Persians and all other Indo-Europeans, such as Kurds, Armenians, Afghans, Greeks,...etc.
The black race includes: Sub-Saharan Africans, Berbers, Indians (from India), and Egytians.
The yellow race includes: The Chinese,the Turks, the Slavs, the Native Americans, and all the other Mongoloid races such as the Vietnamese, the Koreans, the Japanese...and...Gog and Magog!

Adam and Eve live quite a long time. You see that they had other children during their years in Genesis 5.
So it is quite possible that Cain married one of his sisters, or one of his nieces, or another woman from the land of Nod. I believe that Cain married some other woman, but I'm not sure. I would have no problem with it if Cain married one of his sisters or nieces. There weren't many people around apparently and there was no concept of incest in those times that I know of.
So I don't think that you are missing anything. You just have to either let it go, or decide what it is that you believe about it. The conclusion you might come up with might be interesting, but it has nothing to do with the thing that Jesus did for us.

Let's say if you are a first creation man and woman. With every food are good to eat and there's no chemical food, no cholestherol food, Earth is new and fresh, I'm assume you two are must be a very healthy human being. So in the life span of Adam and Eve who last for 900years, do you think they only have 1 son? Since God command themself to be fruitfull and multiply and fill the earth, im sure they will obey the command to produce the most son and daughter of earth.
Go to the poor country in Asia who lack of knowledge and condom. most of the farmer in the village can have 14 child in their 60years old life span.
Now, the Law of Incest is Given by God, no in the time of adam but in the time of Moses. When the human population is enough and already wide spread to all the earth. God give the law, because there is a genetic degradation on that generation if one genetic brother and sister will marry, they will be a deflect in the DNA of the baby. So, it is design by God for a purpose. So that human will not produce a deflected baby to fill the earth.
So, yes in the time of adam and eve, brother will marry sister, and son will marry mother, since there's no law about it, and all their gene is still fresh and pure.
Oh yeah,.. one more thing,... Bible is written mostly by Moses Which is a jew tradition always record everything in the line of Male. So there may be a lot of daughters but the name will not written.

No where does scripture intend to say that is the only children ever born, it was common in that day, and in all ancient times, to just list the prominent figures.
i.e. Abel, who gets murdered
Cain, who was a murderer
Seth, who took Abel's place, so to speak
For all we know Adam and Eve had 60 children. Of course either way, if they originally the only humans, in order to populate a third generation either the children would have relations with their parents or with their siblings, which is incest, but two things to think about.................... First, if God put only two humans on earth, then he must not count it against them for having incest because they did not have a choice, thus it basically was not a sin. Secondly, there was no law back then. The only original law was not to eat the fruit from the tree, but they couldn't even keep from doing that. Thus God needed to establish some sort of laws to keep mankind supervised until he could redeem them from their sin. Concerning the colors, it is a simple matter of biology. Our skin tone adapts to our environment, and most importantly our heritage affects it...... For instance my mom's side of the family is Native American but my dad's is Caucasian. I look a lot like my mom, but people tend to think I look Asian or Filipino because I am not 100% American Indian.... Physical appearances change a lot between generations.

This story in the Hebrew Torah comes from ancient oral traditions. Most Jews (and some Christians) now and in the past do not and have never taken the story literally and marvel at those that do. Whether or not Adam and Eve were real people or even the first two homo sapiens to live is not the point the author intended with the story.

Genesis 4:17 says, "Cain lay with his wife, and she became pregnant and gave birth to Enoch." Who was his wife? It is implied in the biblical text that Cain married one of his sisters. Several facts lead us to this conclusion.
First, it is clear that Adam and Eve had a number of children. Genesis 5:4 says, "After Seth was born, Adam lived 800 years and had other sons and daughters." Since Adam and Eve were the first man and woman, and since God had commanded them (and their descendants) to be fruitful and multiply (Genesis 1:28), it seems reasonable to conclude that Cain married one of his many sisters. It is also possible that he married a niece or even a grandniece.
One must keep in mind that in the early years of the human race there were no genetic defects that had yet developed as a result of the fall of man. By the time of Abraham, God had not yet declared this kind of marriage to be contrary to His will (see Genesis 20:12). Laws governing incest apparently did not become enacted until the time of Moses (Lev 18:7-17; 20:11,12,14,17,20,21). Hence, there was no prohibition regarding marrying a sister (or niece or grandniece) in the days of Cain.

People assume that Cain and Able were the only children Adam and Eve had. But, you have to go back to Genesis and look at what God said concerning Adam and Eve. The Lord said, be fruiful and multiply and replenish the earth. Also, you will read that after Cain killed his brother Abel, he left and built a city, but he took a wife and she bared him a son named Enoch. The point of this is that there were more people around than just Adam, Eve, Cain, and Abel. Adam lived almost 800 years. That was plent of time for many brothes and sisters to be born among Cain and Abel.

Adam and Eve lived for 900 some years. During that time they had lots of children. Three male children were named but no where does it say how many other children were born before, during or after the times that they were born. Obviously, these children moved and had children of their own--sister and brother marrying and having children, but they were still so close to perfect that it did not produce deformaties. When Cain went to Nod and took a wife, she could have been his sister, cousin, neice, etc.
As for the races, when God confused the language at the tower of Babel and small groups of people moved away from eachother and no longer associated with eachother, the strongest genetic factors in each group produced variations in appearance.

In Genesis 5 it says that Adam lived for a long time and had other sons and daughters.
Now skeptics will say something about incest. Why was that law given? We know that too much inbreeding causes weakness in species. How ever this over several generations. Originally there was no law against incest. That came much later. The reason that the law was given to the Israelites was to keep the race strong.
