JAMBALAYA
1 lb. boneless, skinless chicken thighs
Olive oil as needed
12 oz. andouille or chorizo sausage, cut into medium dice
1 green bell pepper, chopped
2 jalapeno peppers, chopped
1 medium onion, chopped
1 batch scallions, chopped
3 celery ribs, chopped
6 cloves garlic, chopped
6 cups chicken broth
3 cups long grain rice
2 tablespoons paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon cayenne pepper
½ teaspoon black pepper
½ teaspoon celery salt
2 bay leaves
1 teaspoon salt
Trim the fat from the chicken thighs and then cut them into quarters. Season them with salt, pepper, and cayenne pepper. Heat up a large pot, add olive oil, and brown the chicken on each side. Remove the chicken with a slotted spoon, set aside and then brown the sausage. Remove the sausage and then sauté the peppers, onions, and celery. Do not drain the grease between each item. Use it to sauté the next item and add flavor to the final dish. Sauté the vegetables until, soft. One minute before they are done add the garlic. Then add the chicken, sausage, broth, rice and seasonings. Cover, bring to a boil, and then simmer for 15 minutes.

This is a wonderful recipe for Lemon Garlic Chicken and it should be possible for you to cook using just one pot. You could serve it with rice or some bread rolls. It is super easy to prepare. I'm sure you're gonna enjoy it. Good luck!!!
INGREDIENTS
1/2 teaspoon dried oregano
1/4 teaspoon salt
a pinch or two of ground black pepper (or as per taste)
1 pound skinless, boneless chicken breast halves
1 tablespoons butter
2 cups water
1 1/2 tablespoons fresh lemon juice
1 cloves garlic, minced
1/2 teaspoon chicken bouillon granules
1/2 teaspoon chopped fresh parsley
DIRECTIONS
In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. (Alternatively you could toss the chicken with the oregano, salt and pepper into a zip lock bag. Mix it well and leave it to marinate for an hour or so in the refrigerator). Melt the butter in a pot over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken aside.
In the same pot, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Add in the chicken. Cover, and cook on Low for 2 hours. As you continue cooking the chicken, you may need to add more water if necessary. Add the parsley to the chicken about 15 minutes before the end of the cooking time.

Coque au Vin (Chicken in red wine)
All you need is...
1- 1 1/2 pounds of chicken (any kind, get your supermarkets butcher to cube it up into 1 inch peices)
Small packet of baby carrots
a small onion (diced)
1 10-14 oz can of potatoes
1 bottle of cheap red wine
salt and pepper to taste
(you could/should add other herbs and spices like, thyme, bay leaf and garlic but I'm not sure if you can get them and it doesn't sound like you have much storage or prep space)
Heat the pot over meduim heat. Add some sort of fat (butter, margerin or oil) and brown you chicken peices. The color should be tan - golden brown. Add your veggies and seasoning (if you add the spices, I would say about 1/2 teaspoon of thyme, 1-2 bay leaves and a clove of garlic minced) heat your veggies until the onions are translucent then add your wine. You need a full 1.5 lt bottle of wine for the dish. Simmer over med heat for about an hour and serve. DO NOT EAT THE BAY LEAF!!!!
The chicken with get a pinkish color to it from the wine.

ALL YOU NEED IS SOMETHING TO PUT IN THE POT. IF YOU CAN CATCH A RABBIT OR TWO ON THE CAMPUS YOU CAN SKIN EM AND BOIL EM UP . GO TO THE STORE AND GET A CHICKEN OR A SMALL POT ROAST AND A FEW CARROTS,ONIONS,AND SPUDS AND PUT EVERYTHING IN YOUR POT AND ADD A BIT OF SOYSAUCE WHICH WILL FLAVOR THE STUFF . START COOKING EARLY AND LET IT COME TO A BOIL AND TURN DOWN THE HEAT AND JUST LET IT COOK ( BUBBLE ) CHECK IT NOW AND THEN AND MAKE SURE THE WATER DOESNT BOIL OUT OF IT. JUST LET IT COOK . YOU CANT COOK IT TOO MUCH. THE BROTH FROM IT WILL BE DELICIOUS. MAKE SURE YOU HAVE A COUPLE OF SPOONS AND MAYBE A COUPLE FORKS. AND NAPKINS BUT YOU DONT NEED NAPKINS. SERVE IT HOT . DONT ADD ANYMORE SALT . THE SOY SAUCE WILL BE SALTY ENOUGH. YOU CAN PICK UP A SMALL BOTTLE OF LOW SODIUM SOYSAUCE. ADD SOY SAUCE TO TASTE. MAKE SURE ANY VEGGIES YOU PUT IN ARE BITE SIZE . ENJOY

Killer Minestrone
3 carrots
1 med. yellow onion
1 rib celery
1/2 green pepper
6 cloves garlic
1/4 bunch parsley
1/2 lb salt pork
1 14oz can diced tomato
1/2 cup tomato paste
1/4 cup beef stock
1/4 cup dried basil
1 tbsp dried oregano
1/2 lb string beans
1 1/4 cup peas
Place 1 carrot, onion, celery, green pepper & garlic in food processor and pulse until finely chopped, put in a large, heavy pot and add parsley, salt pork and 3 quarts water. Bring to a boil, reduce heat and simmer, covered for 4 hrs .
Transfer salt pork to food processor and process until fat liquifies and meat is paste (30 seconds), pass through seive back into pot, skim fat. Add tomato, tomato paste, beef stock, basil, oregano and 1 tsp pepper. Simmer at med. heat, covered for 2 hours.
Add 4 cups water, increase heat and bring to a boil, slice remaining 2 carrots thinly, add with peas and green beans. Reduce heat and simmer partially covered until veggies are tender. Season to taste.

Get a soup mix (Bear Creek is really good) or make Jambalaya with Zatarain's mix (add chicken or sausage). Use her hot pot to make a simple chocolate fondue (this is an easy, yummy one - http://allrecipes.com/Recipe/Totally-Groovy-Chocolate-Fondue/Detail.aspx ) Serve with pound cake cubes, apple slices, grapes, strawberries, bananas. Have a good bottle of red wine or sparkling wine. Relax, and enjoy!

some sort of stew or casserole, serve with fresh bread rolls from a bakery, or maybe even like a chicken risotto dish. look up recipes on the net and see what you can come up with.

stew....chili....a great soup.....
(why not get take out or take her out...it's simpler and costs just about the same these days and you won't have to buy anything and make a mess in a place that has no room to make a mess...)
