Do you mean when you set it so that the weight of the container isn't counted in the total weight? It's called "tare".
Calibration is setting a scale to weigh accurately by comparing the readout with an object of a known weight.

it's called "zeroing the scale". another term for it is calibration, which is essentially making sure that the scale says zero to start, so that the weights you get are not off.

If you mean you have something already on the scale--like the bowl you're going to measure in--and you want to set it to zero with that on there, you're talking about the TARE function.
