One of my students told me that a secret to one of the DELICIOUS fast-food chicken places is that they just use WATER then flour. How they get that crust so flaky and crunchy is probably the water UNDER the flour frying up. Boy, is it good! Also season your flour. Wait til you hear how Luby's gets that fabulous crunchy crust on their fried fish.... well, I can't tell but it sure helps to know people who work places.

First of all, I use Wondra Flour
Chicken Seasoning
Garlic Powder
Onion Powder
Paprika
Black Pepper
Put all in gallon size plastic zip lock bag and shake all dry ingredients.Rinse chicken off in cold water, take any fat and skin off.Shake chicken in bag and fry in a deep fryer or a cast iron frying pan.Keep turning chicken over and over until golden brown.Keep a lid on it, it will help keep the chicken moist during the cooking process.

take skinless boneless breasts
wash in water then soak in milk and bread crumbs or pecan slivers or almond slivers and set aside

Heat cooking oil in skillet until real warm, drop a bit of the bread crumbs in and if it sizzles, the oil is ready temp of around 350 degrees.
cook the breasts on each side about 6 to 8 minutes, if you have a meat thermometer take the reading for poultry and when done, take and enjoy.

I do it in a pressure cooker like Colonel Sanders. Buttermilk before you flour it works good, too.
