Minimum of once a week. There are 3 major contributers for oil brake down, light, heat, and salt. Because of this most "good" resturants change their oil at least once a week. However it is usually filtered every day to get the bits and peices of burnt crap out.

Change it? I have used the same fish and chip oil at my restaurant for over 20 years. They just keep getting better!

It should be filtered after every use and if you do that it can be used 3 or 4 times

I guess it depends on how often you use it.
I use mine then let it cool and the debris settle, pour off the rest into a container & freeze it until I need it again.
I get six or eight uses in a year.

When I was a chef we would strain the oil everyday and change it weekly.

once a week,we have 1 and i just asked my mom.she doesnt know about yahoo answers and she was like "why are you asking me these kind of weird questions" and she said "Once a week" and i was like "thanx". and she said "you better not be entering and contests".lol
