The little "chunks" are tapioca pearls. Tapioca pudding is just vanilla pudding with the tapioca pearls throughout. When I was little my sisters used to tell me that they were fish eggs so I never ate it!

THE CHUNKS ARE THE PEARLS OF TAPIOCA. ITS DELICIOUS. LOOK UP TAPIOCA ON THE INTERNET AND IT'LL TELL YA HOW IT IS GROWN OR WHATEVER. YOU CAN BUY THE PEARLS AT THE GROCERY STORE AND THE RECIPE FOR THE PUDDING IS ON THE BOX. I LIKE THE LARGE PEARLS BUT MAYBE YOU WILL PREFER THE SMALLER PEARLS. ENJOY

Those are the starch particles (big ones are called pearls) that are made from the cassava root. They swell up from being cooked in hot milk and add a great texture to the flavored pudding.
