A VERY sharp knife used in each case. Does any seedy expert know why?

The grapefruit seeds can't move inside the grapefruit as you cut, so they're going to be cut through if they're in the way.
In contrast, the seeds inside a melon sit in a loose membrane, allowing movement either side of the knife blade as you cut, so they won't be cut, unless you trap them between the knife and a hard surface like the chopping board.

In honeydew or cantalope in addition to the seeds there is space in the inside. So when the knife hits a seed the seed is just moved out of path of the knife.

In grapefruit there is no room for the seeds to move, so they stay in place and are cut.

Melon seeds are flat. Citrus seeds are not. You have too much time on your hands. LOL
