Blackberry-Peach Parfait
3 cups blackberries, fresh, or whole frozen berries
1 6-ounce package berry gelatin (any berry gelatin may be substituted)
1 envelope unflavored gelatin
2/3 cup water
2 tablespoons lemon juice
1 cup heavy cream
6 ounces low-fat cream cheese
OR
6 ounces regular cream cheese, softened
2 cups peaches, peeled and sliced
1.Sugar the berries according to taste. (If using frozen sweetened berries, drain well, using juice as part of the cold water for the gelatin.) Dissolve berry gelatin in 2 cups boiling water. Stir in 1 cup cold water, and chill until partially set; fold in berries. Set aside.

2.Soften unflavored gelatin in 2/3 cup cold water; stir to dissolve. Microwave 40 seconds at high setting (Full Power). Stir thoroughly and add in lemon juice. Cool. Set aside.

3.Whip cream until stiff; beat in cream cheese. Slowly pour in cooled lemon juice-gelatin mixture, beating continuously to blend. Chill 10-15 minutes until partially set. Fold in peaches.

4.Drop berry mixture alternately with peach mixture into parfait glasses, finishing with peach layer. Chill until set. Garnish top with fresh berries, if available.

VALENTINE PARFAIT - WHITE CHOCOLATE MOUSSE WITH RASPBERRY SAUCE
2 10-ounce packages frozen raspberries in syrup
Juice of 1/2 lemon
1/4 cup sugar
2 tablespoons cornstarch
1/2 cup water
1 tablespoon Grand Marnier or other liqueur (optional)

MOUSSE
1/4 cup water
1 teaspoon unflavored gelatin
1/4 cup milk
5 ounces white chocolate, broken up
1 1/2 cups heavy whipping cream
1.Combine undrained berries and lemon juice in processor or blender and purée. Strain, pressing with back of spoon. Add sugar, cornstarch, water and liqueur; blend well. Place in saucepan over medium heat and bring to boil, stirring frequently. Reduce heat and continue stirring one minute. Remove from heat and allow to cool until ready to use.

2.In a glass measuring cup, sprinkle gelatin over cold water and allow mixture to soften for 1-2 minutes. Microwave on HIGH 20-40 seconds and allow to stand for 2 minutes, or until granules are completely dissolved. (Alternatively, place cup in a bowl of hot water and stir until completely dissolved.) In a small saucepan bring milk to the simmering point. Remove from heat and add white chocolate. Stir occasionally until chocolate is melted and mixture is smooth. Blend gelatin into chocolate mixture and refrigerate until slightly thickened but not gelled — about 10 minutes.

3.Whip cream until stiff and peaks hold their shape. Fold white chocolate mixture into whipped cream . Beginning with raspberry sauce, alternate layers of mousse with raspberry sauce into tall parfait glasses. Refrigerate 1-2 hours. To serve, garnish with partially frozen whole berries, or fresh if available.

Not exactly a parfait, but close:

1 tub cool whip topping
1 cup sweetened strawberry slices
1 pkg shortcake

Tear up the shortcake and mix with the strawberries & cool whip. Sorry I don't have more detailed instructions than that but it's very yummy. You can also layer the ingredients in a nice parfait glass. Should serve about 4.

3/4 cup whipping cream
1/4 cup sugar
2 teaspoons cornstarch
2 egg yolks
4 oz (4 squares) white baking chocolate
1 teaspoon vanilla extract
3 cups whipped topping
3 cups fresh berries

For Mousse: Bring cream just to a boil in a saucepan, stirring constantly. In a small bowl, combine sugar and cornstarch; stir in egg yolks until combines. Gradually pour about a third of the hot cream into yolk mixture while stirring to form a smooth mixture. Return the yolk mixture to the pan. Cook and stir for 2 minutes or until mixture reaches 160-degrees F. and is thickened. Stir in chocolate until melted; add vanilla. Cool to room temperature (about 15 minutes). Fold in whipped topping. Place 1/4 cup of mouse in each of 4 parfait glasses. Combine berries; top mouse with 1/4 cup berries in each glass. Repeat layers two more times. Cover and refrigerate for at least 1 hour. Garnish with additional berries and whipped topping as desired.

1 pound cake, lemon is best, vanilla good too
1 8 oz pkg cream cheese, softened to room temperature
powdered sugar, at least 1/2 cup
1 tsp. lemon juice
1/4 c. seedless raspberry jam
1-2 Tblsp. water

slice the pound cake into 1/2 inch slices. cut discs out with the same size parfait glass you're going to use.
Mix the powdered sugar and cream cheese until it is smooth. Taste it for sweetness ( i like mine pretty sweet!). Then add the tsp. of lemon juice.
Stir the water into the jam until it drips easily from the spoon.

Starting with a spoonful of cream cheese mixture, drop it into the parfait glass, then top with 1 pound cake disc, then a spoonful of the cream cheese mixture, then a spoonful of the jam. press in one more disc of pound cake, then the cream cheese, and finally the jam. You should be able to make 4 parfaits with this recipe. Cover with plastic wrap and store in the frig until time to serve.
