If you're not on one of those low carb diets, spaghetti is not too bad. You can choose between whole wheat noodles or regular noodles, too. If you want it to be super easy, there are ready made sauces in jars and all you have to do is cook the noodles. Or if you want to be really "fancy" you can make your own sauce.... sort of.
Chop some onion (amount depends on your taste)
Brown .5 lb. ground beef with the onion in a skillet.
Dump a can of tomato sauce and a can of diced tomatoes into a sauce pot with plenty of italian seasoning. You can use two cans of sauce if you don't want tomato chunks in your sauce.
Add the ground beef and you have a very simple sauce.
This should make enough sauce for about 3 or 4 people depending on how much they eat and how saucey they like their spaghetti.
You can add pretty much whatever you want to the sauce, chopped black olives or cheese. If you want to add mushrooms or bell pepper I would suggest cooking them with the beef to soften them up a little before adding them to the sauce.
Remember you can always add to the sauce to make it more flavorful, or more tomato sauce to stretch it further, but it's very hard to take away once you've added.
This goes well with a salad with a light vinaigrette dressing, and bread sticks. You can find easy bread sticks and all kinds of other ready to bake breads in the biscuit dough section at the grocery store.
Also, check the freezer section at your local grocery store. There are all kinds of things that aren't your basic plain frozen dinners.

Here is a recipe that is good and easy!
Chicken-poblano enchiladas
Serves 3 - 4
2 full chicken breasts (4 halves) roasted and shredded (See Note Below)
1/2 half diced red bell pepper
2 poblano peppers roasted (See Note)
2 cups Chihuahua cheese (Mexican white cheese) or you can use mozzarella or another white cheese
2 cups fresh baby spinach
12 soft enchilada shells (I use the flour shells. You could use corn)
6 oz. red enchilada sauce (in a can)
6 oz. green enchilada sauce (in a can)
1 cup diced fresh tomato
sour cream optional
Note: You can buy roasted chicken or you can roast your own. I take the extra step to roast my own because I am roasting the poblanos at the same time.
In an ovenproof pan, 9 X 13, put in your chicken breasts. Spray with olive oil or canola oil. Cut the stem ends off of the poblanos and place them in the pan with the chicken. Roast the two of them, uncovered, at 350 degrees for an hour. Both will be done.
When the chicken is cool enough to handle shred it. I just hold the chicken down on a cutting board with a fork and use a second fork to pull shreds of chicken off. You can shred all of the breasts this way. Put them in a medium bowl with the diced red pepper. When the poblanos are cool enough to handle you are going to cut them into very narrow strips. Don't worry about taking out the seeds. These are mild, smoky-tasting peppers, not hot. Put the sliced poblanos in the bowl. Now add the cheese and mix the whole batch until it is fully blended.
Now you're ready to assemble.
Put an enchilada tortillas on the counter. Spread one-twelfth of the spinach in the middle. It's a small portion. Maybe 12 leaves. Then take one-twelfth of the chicken mixture and put that in the middle. Now, roll up the enchilada. Place in a 9 X 13 pan. Do the same with the rest of the tortillas and filling. Pour one can of the enchilada sauce over 6 of the enchiladas and the other can over the other 6. This way you have two flavors to choose from when you serve.
Put the dish, uncovered, in your oven on 350 for 30 minutes until it is completely heated through.
Now you are ready to serve.
Each person gets 3 - 4 enchiladas. When they are all plated, sprinkle on the diced fresh tomato. A little on each plate over the enchiladas. Now for a dollop of sour cream on each batch.
Serve with chips and salsa. Maybe even re-fried beans, hot pinto beans, or Mexican corn heated from the can. Easy meal.

Cheese Enchiladas-quick and easy to make- Get a pkg of corn tortillas, a can of enchilada sauce, and some cheese. Put about 1/3 in of oil in a frying pan, lightly fry the tortillas so they are still soft, pour sauce on aplate dip cooked tortillas on both sides, add cheese and/or meat, sour cream, roll up, and sprinkle cheese on top, heat in microwave for 30sec-1min. Garnish with lettuce & tomatoes, serve with rice.
Meat Roast
Brown meat in a large pan on all sides, add water cook for about 11/2 hrs add potatoes, carrots, & onions cook an additional 45 min. Add salt & pepper to taste. Enjoy! The next day shred meat, add corn, green beans, 1 can of chopped tomatoes, you now have stew.
You can freeze left overs, in portions to re-heat later in the microwave, same for the Enchiladas.
Broild Fish- I prefer Orange Roughy.
Shrimp Pasta Salad
Get a bag of frozen cooked shrimp,thaw shrimp & remove tails, boil some macaroni noodles, drain noodles, add shrimp, 1 diced sweet pepper, 2 stalks of celery(if you like celery), Put appx 1 cup of Mayo of your choice, mix, chill, enjoy.

When I want a fast easy meal I start with a store bought stock(canned or container) and then I add uncooked rice, or pasta, or even at the very end of the cook time a slice of bread to thicken. In the interim add veggies,meat, potatoes, tomatoes, etc.,. This is fast and easy to clean up; one pot. Use health conscience products...low in sodium... try it. Also pre-cook fresh food FIRST and then freeze. Take it out of the freezer and place in the "soup". If you don't feel like soup...heat the frozen pre-cooked portion...no new mess to clean up.

This is simple and yummy, I guarenttee you can do it.
This is one of my favorite meals..and has become my boyfriend's favorite...and he hates mushrooms!
Cream of Mushroom Chicken
Ingredients:
Chicken
cream of mushroom soup
milk
ready made mashed potatos (in the refridgerated section)
Corn niblets in butter sauce ( in the frozen section)
dinner rolls if desired
Buy cut up chicken peices (bone in)...if you only like white meat...get a package of breasts..if you only like dark meat...get thighs and drumsticks.
By the whole chicken (already cut up) if you are not sure.
Salt and pepper the chicken...put in baking pan...add pats of butter to each piece. Cook uncovered at 375 degrees for 50 minutes. Baste once or twice with the melted butter during the cooking time.
Meanwhile...in a saucepan, empty 2 cans (10 3/4 oz) of Campbell's cream of mushroom soup.Fill one can with milk and add to saucepan. Mix together over med/low heat. Add more milk if it is too thick. You want it as thick as you like your gravy.
Pour over chicken, and cook chicken another 20 minutes.
The ready made mashed potatoes taste as good as homemade...just microwave them when chicken has about 20 minutes left.
Then microwave the corn niblets.
This recipe can be used or up to about 8 - 10 peices of chicken.
Or for just a few...but it's so good you'll want leftovers...

Chicken parmesan is easy (sauce from a jar). I make tuna noodles which is half a bag of noodles, a can of tuna and a can or cream of mushroom soup. Stir fry w/veggies and beef. I like salmon patties (half canned salmon mixed w/crushed crackers) fried in oil w/mac 'n cheese on the side.

cook up some bacon and when that is almost done throw in some hashbrowns and when that is just about done throw on some scrabbled eggs and some cheese on it. cooks in about 10-15 minutes and it is good can use it for left overs.
