I need several EASY recipes some unique ones would be great! I am throwing a surprise party for my husband who is changing jobs! I want to cook like REAL food not JUST finger foods! So I need all kinds of recipes! I was thinking of getting a party sub, and then making a casserole?

I'm a gourmet cook. I'd always make real fancy appetizers and food. But my friend Jamie would always bring his dish and people would love it. And it was the easiest thing.

So here it is:

Jamie's Famous Dip

A jar of store bought salsa
1 package of cream cheese

Just put the cream cheese in a dish. Pour the salsa over it. Serve with tortilla chips!

Without giving you a loaundry list of recipes, I would suggest you check out a discount resturant supplier that can help you serve that many people on a budget. The bestone in our area is Gordon Food Services (GFS). They are awesome. They even have this cool program that you can put in what type of event, how many people and it will give you menus to choose from with the correct amount of portions. I was unsure from your description if you wanted to do dinner or just hors' dourves. Everything is in bulk so you can buy a lot and they have everythingto make a sit down dinner or the appetizers. Best of all there stuff is quite yummy! Any way they can help you out, save you time and $$! Good luck!

Taco Casserole

INGREDIENTS
6 cups corn tortilla chips
2 cups vegetarian chili with beans
1 cup shredded Cheddar cheese
2 cups shredded lettuce
2 roma (plum) tomatoes, chopped
1/2 cup salsa
1/4 cup sour cream

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Place chips in the bottom of a 9 inch square baking dish. Pour chili straight from the can over the chips. Sprinkle shredded cheese over the top.
Bake for 20 to 25 minutes in the preheated oven, until chili is bubbling and cheese is melted. Top with lettuce, tomato, sour cream and salsa in the pan, or after serving (if people are picky).

This has always been the hit at every party. Simple and delicious:

2 Packages Pillsbury crescent rolls
About 4 or 5 eggs
3/4 lbs. ham
3/4 lbs. salami
3/4 lbs. mozzarella cheese
3/4 lbs. swiss cheese.

In a rectangle baking pan (9 x 13) roll out one of the pillsbury dough. DO NOT SEPARATE.
Spread dough on bottom of pan.
Beat the eggs in a separate bowl.
Start making layers, alternating, ham, mozzarella, salami, swiss, brushing beaten egg over each layer.
When you reach the top, cover with second roll of crescent dough. Brush top with egg.
Bake in oven on degrees according to crescent dough instructions. (Sorry, I don't have it in front of me and I forgot if it's 350, 375, or 400) Until golden brown. If it gets too dark and the middle is still not done, cover with aluminum foil.

Let cool half way, then cut into small squares

You can use less cold cuts if you'd like, omit salami, use different cheese, like provolone, etc.
I am asked to make this whenever there's a covered dish type party.



Chili dip

Always a crowd pleaser!

In a glass pie plate, spread 1- 8oz package of cream cheese on bottom.
On top of cream cheese, spread 1-can of chili (without the beans)
Top with shredded cheddar cheese
Put into microwave until bubbly
Serve with tortilla chips

here is a great dessert and dinner recepie. ok you want to start by buying a pillsberry roll out pie crust then cut up apples ( red apples are the best kind to use ) into llittle bit size peices, put them in a bowl. then put alot of cinnamin and sugar all over them and toss them and stir them. put your bottom bace in the baking pan then fill it up with your apples that have been tossed and tirned. then put your top bace on there. put it in the oven at 350 degrese.
keep it in there for about.......20 to 30 minutes or intil brown. now the main cores. your going to need short noodles and some american cheese. first boil the noodles ontill there pretty soft and add the cheese. once there to the cheesey goodness you want take them off the stove and serve them then after that serve your pie with some vanella ice cream or some cool whip.

Crab and Chestnut on Melba Toast Fingers

Makes 18

200g crab meat
200g chestnut puree
50g toasted walnuts, lightly crushed
2 tbsp double or thickened cream
6 slices whole meal bread
Salt and pepper

1.Add the cream to the chestnut puree and blend. This will lighten the chestnut puree to a more manageable consistency. Season with salt and pepper.
2.Fold in the crab meat and mix well. Leave in the fridge to chill.
3.Trim off crusts of bread slices and toast till very light brown. Cut each toasted slice into threes. Then, slice in between each finger so you get two thin wafers.
4.Dry toast wafers out in 180 deg C oven for about five minutes or until dry and curled. You must watch that they do not burn. Allow to cool and keep in airtight tin until ready to serve.
5.Just before serving, return crab and chestnut mixture to room temperature. Place a spoonful on each Melba toast finger and top with crushed walnuts. Add a sprinkle of freshly cracked black pepper.

Here is my fav recipe for subs

INGREDIENTS
1 (3 ounce) package cream cheese, softened
1 loaf unsliced French bread, halved lengthwise
6 slices deli ham
6 slices provolone cheese
1 (4.5 ounce) jar sliced mushrooms, drained
2 medium tomatoes, thinly sliced
1 small onion, thinly sliced
2 banana peppers, thinly sliced
2 cups shredded lettuce
DIRECTIONS
Spread cream cheese on bottom half of bread. Layer with the ham, cheese, mushrooms, tomatoes if desired, onion, peppers and lettuce. Replace top. Cut into 1-1/2-in. slices.


Here is my favorite caserole recipe

INGREDIENTS
3 teaspoons vegetable oil
3 skinless, boneless chicken breasts
1 (5.5 ounce) package scalloped potato mix
4 potatoes, thinly sliced
2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet over medium high heat. Add chicken breasts and saute until tender. Meanwhile, prepare potatoes according to package directions, adding 1 cup (instead of 2/3 cup) of milk and sliced potatoes. When chicken is tender, remove from heat, let cool and shred. Add shredded chicken to potato mixture.
Fold chicken/potato mixture into a 9x13 inch baking dish. Cover and bake in the preheated oven for 25 to 35 minutes. Add cheese and bake for another 10 minutes.

You were thinking about getting a sub...Is that cause he likes subs? Why not instead make a lovely antipasto salad using chunks of all his favorite meats and cheeses. Add to that a nice olive plate with black and green olives, marinated mushrooms and marinated artichokes.

Something hot to go with it...garlic bread w/cheese.

To finish, buy a nice tiramisu or cheesecake.

You can drink white or red wine, your preference.

This one is a hit in all our parties

Mini beef and beer pies

1 tablespoon vegetable oil
3 rashers rindless bacon, finely chopped
1 onion, finely chopped
500g beef mince
¼ cup plain flour
375ml bottle beer
1 cup beef stock
4 sheets frozen shortcrust pastry, thawed
3 sheets frozen puff pastry, thawed
1 egg, lightly beaten
tomato sauce, to serve

Preheat oven to hot, 200°C. Lightly grease three 12-hole mini-muffin pans.
Heat oil in a large saucepan on high. Sauté bacon and onion for 3-4 minutes until onion is tender.
Add mince. Brown well for 4-5 minutes, breaking up lumps with the back of a spoon as it cooks.
Blend in flour. Cook, stirring, for 2 minutes. Gradually stir in beer and stock. Bring to boil, stirring. Reduce heat. Simmer, uncovered, for 10 minutes, until mixture reduces and thickens. Transfer mixture to a large bowl. Cool filling for 10 minutes, then chill until cold.
Meanwhile, using a 6.5cm cutter, cut 9 rounds from each shortcrust pastry sheet. Press 1 round into each muffin pan hole. Using a 5.5cm cutter, cut 12 rounds from each puff pastry sheet.
Spoon 2 heaped teaspoons of chilled filling into each muffin pan hole, brushing edge with a little egg. Top each pie with smaller pastry rounds.
Press gently around the edge to seal. Brush the tops with remaining egg. Using a sharp knife, make two small slits for air holes in the top of each pie.
Bake for 12-15 minutes until golden and puffed. Rest in pan for 5 minutes before serving with tomato sauce.

40 clove chicken and garlic noodles

1/3 cup all-purpose flour
2 tablespoons paprika
1 tablespoon kosher salt
1 tablespoon black pepper
3 tablespoons olive oil
6 chicken thighs, dusted in flour mixture
40 cloves garlic, peeled
3 stalks celery, diced
1 medium yellow onion, sliced
1 cup dry white wine
1 cup chicken broth
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 bay leaves

Chicken Thighs/Legs Main Dish
Preheat oven to 375 degrees with rack in the center.
Combine flour, paprika, salt, and pepper in a large plastic bag.
Coat chicken in seasoned flour.
Shake off excess flour.
Heat oil in a large ovenproof saute pan over medium-high heat.
Brown chicken on both sides; remove from pan.
Add garlic, celery and onion; saute until lightly browned.
Add wine, broth, and herbs, then arrange browned chicken on top, skin side up; bring to a simmer.
Cover the pan; transfer to the oven and braise 45 minutes.
Makes 6 chicken thighs with sauce

Garlic Noodles
P.F. Chang's China Bistro Garlic Noodles

3 teaspoons minced garlic
3 teaspoons granulated sugar
2 tablespoons white vinegar
1 1/2 teaspoons red chile flakes
2 tablespoons canola oil
1 pound fresh Chinese noodle or vermicelli
1/2 teaspoon sesame oil
4 ounces Cantonese stir fry sauce (see recipe below)
1 Japanese cucumber or English cucumber
2 tablespoons chopped cilantro

Cantonese Stir Fry Sauce
3/4 cup water
1 tablespoon chicken base powder (no MSG)
1 tablespoon granulated sugar
2 tablespoons shaohsing wine or sherry
1 tablespoon oyster sauce
1/2 teaspoon salt
1 teaspoon cornstarch

Cook pasta. Rinse and cool down. Set aside. Toss in red chile flakes and cilantro.

Wash cucumber. Slice diagonally into 1/4" thick slices. Slice into strips. Set aside.

Heat wok thoroughly, add oil, then minced garlic. Stir fry briefly. Do not burn garlic or it will take on an acrid smell and taste. (If this happens, throw it out and start over.)

Add sugar and vinegar.

Add noodle to wok, stirring and tossing to mix until noodle is heated through.

Place on plates and surround with cucumber strips.

NOTE: Chinese noodle is available fresh frozen, and can be cooked like any fresh pasta. Bring water to boil, and noodles, separate. Drain and shock in cold water. Toss with salad oil. Uncooked fresh pasta can be frozen indefinitely.

Cantonese Stir Fry Sauce
1. Very concentrated. Use sparingly when stir frying vegetables or tossing with noodles.
2. Recipe doubles.
3. Refrigerates well, up to a month.
4. Stir thoroughly before using.
