I'm finding my girlfriend a bit argumentaive, never met someone like her before; she seems to snap at the slightest thing.
She gets all a$$y at me for just mis-reading a text or something about something unimportant as though she's wound too tightly.
To me this isn't normal but if anyone can explain the female mind slightly it'd be great.

Is this an all the time thing? If so, she is high strung and will probably not change.
If this is infrequently, but say, one week out of the month, blame hormones.
And if this is a recent development, she's probably stressed about something and needs to work through it. I'd ask her about the latter two; if she has always been this way, though, it is a personality flaw and I recommend that you dump her!

Some people, both male and female, can have bad temper and poor communication skills. your girlfriend reminds me of my dear super eccentric uncle Roland, who is currently 60, never married and has no kids. He is also argumentative and it's impossible to speak to him without this leading to world war 3.
That is why he is a lonely lonely man. Unless your girlfriend learns to chill out, or maybe take some anger management classes, her being on the attack while you are on the defencive all the time can be taxing on your relationship. If it's only once in a while it's not bad. The most important thing here is to work as a team and see if indeed you are meant for one another or it's getting from bad to worse.

This isn't a female thing unique to women. This is a Type-A, argumentative thing.

Let me guess - she has a super-high-stress job, or her mother's a shrew from hell?

At any rate, it sounds as though you don't thrive on constant contentiousness in a partner, so you might just have conflicting personality styles.

Could be many things, stress from work, school, fight with a friend and so on. The easiest way to get an answer is to ask her whats wrong and why she has been more tense lately.
