Fry some pork chops. Once they are cooked lay them to the side.

Take 3 chile de arbol peppers
6 chili Guajillo's
4 Tomatillos
boil all together for about 15 minutes.

Put in blender with a little water and a clove of garlic, and a little pinch of cummin. Blend well and pour over pork chops and let simmer for about 10-15 minutes. Serve with some rice.

Moroccan Chicken With Tomatoes and Honey

1 large onion, grated
3 tablespoons oil
1 large roasting chicken, in peices
1 kg tomatoes, skinned and chopped
1/2 teaspoon ginger, gnd
1 teaspoon cinnamon
1/2 teaspoon saffron or turmeric
2-4 tablespoons clear honey
50 g coursely chopped blanched almonds
1 tablespoon sesame seeds
salt
1/4-1/2 teaspoon ground pepper

Put all except honey, almonds, seasame seeds and 1T oil in large pan. Covcer and cook over low heat stirring time to time for 1 hour.
Remove chicken and roast in oven to brown slightly while cooking sauce uncovered to thicken slightly should be like a sizzling cream. Stir all the time. Then add the honey and return chicken to pot.
Heat in seperate pan the oil and add almonds and cook only moments and then seasame seeds and cook moments too until lightly covered.
Serve chicken hot covered with the sauce and then a sprinkling of the nuts.
