~~~ Crab and Chestnut on Melba Toast Fingers ~~~
Makes 18

200g crabmeat
200g chestnut puree
50g toasted walnuts, lightly crushed
2 tbsp double or thickened cream
6 slices whole meal bread
Salt and pepper

1.Add the cream to the chestnut puree and blend. This will lighten the chestnut puree to a more manageable consistency. Season with salt and pepper.
2.Fold in the crabmeat and mix well. Leave in the fridge to chill.
3.Trim off crusts of bread slices and toast till very light brown. Cut each toasted slice into threes. Then, slice in between each finger so you get two thin wafers.
4.Dry toast wafers out in 180 deg C oven for about five minutes or until dry and curled. You must watch that they do not burn. Allow to cool and keep in airtight tin until ready to serve.
5.Just before serving, return crab and chestnut mixture to room temperature. Place a spoonful on each Melba toast finger and top with crushed walnuts. Add a sprinkle of freshly cracked black pepper.

~~~ Spicy Oven Fried Chicken ~~~

3/4 cup buttermilk
1 tbsp hot pepper sauce
1 tbsp Dijon mustard
2 cloves garlic, minced
1/2 tsp black pepper
2 tsp salt
4 boneless, skinless chicken breasts (about 1 1/2 lbs total)
1 cup plain bread crumbs
1/4 cup grated parmesan cheese
2 tbsp flour
2 tsp dried thyme
1/2 tsp paprika
1/2 tsp cayenne pepper
3 tbsp olive oil

1. In a large bowl, whisk buttermilk, hot sauce, mustard, garlic, pepper, and 1 teaspoon of the salt. Add chicken and turn to coat. Cover and refrigerate at least 4 hours or overnight, turning occasionally.

2. In a large bowl, combine bread crumbs, Parmesan, flour, thyme, paprika, cayenne, remaining 1 teaspoon salt and 2 tablespoons of oil; mix well. Remove chicken from marinade; place in seasoned bread crumb mixture. Turn to coat. Place chicken on a baking rack and let sit for 20 minutes so that the crumbs will adhere better.

3. Meanwhile, put remaining 1 tablespoon olive oil in a rimmed baking sheet and place in oven; heat oven to 400 degrees. After about 5 minutes, place chicken on heated baking sheet. Bake at 400 degrees for 30 minutes or until crispy, golden and baked through.

~~~ Maryland Crab Cakes with Tomato-Avocado Relish ~~~

1 large tomato, cut into 1/4-inch dice
1/3 cup diced avocado
2 tbs chopped Cilantro or parsley
2 tbs minced red onion
1 tbs lime juice
1/2 tsp salt
1/4 tsp red hot pepper sauce
1 slice firm white sandwich bread, crumbled
1/4 cup low-fat milk
1 pound lump crab meat, picked over to remove any cartilage
2 tbs light mayonnaise
1/3 cup plain dry bread crumbs
4 tsp vegetable oil

1. In a medium bowl, combine the tomato, avocado, cilantro, onion, lime juice, 1/4 tsp of salt, and the hot pepper sauce. Cover and refrigerate while you prepare the crab cakes

2. In a medium bowl, thoroughly combine the crumbled bread and milk. Add the crab meat, mayonnaise, and remaining 1/4 tsp salt, stirring to combine. Shape into 8 crab cakes and dredge in the dry bread crumbs.

3. Preheat the oven to 400F. In a large nonstick skillet, heat the oil over moderate heat. Saute the crab cakes for 2 minutes per side or until golden brown. Transfer the cakes to a baking sheet and bake for 5 minutes or until heated through. Serve the cakes with the tomato-avocado relish

~~~~~~~~ Wholemeal Pizza Baps ~~~~~~~~

Wholemeal baps or large rolls provide the perfect, ready-made base for these healthy mini pizzas. They are quick and easy to make-as a filling snack with a tossed green salad, or for a party.
(Serves 4)

4 wholemeal baps
1 clove garlic
1oz (25g) butter or sunflower margarine
1 tbs chopped parsley
salt and freshly ground black pepper
2 large beef tomatoes
2 tsp mixed dried herbs
4oz (115g) grated Mozzarella cheese
8 black olives
2oz (50g) can anchovy fillets
2 tbs chopped chives

Cut each bap in half and place on the large grill rack with the cut sides uppermost. Crush the garlic and blend the butter or margarine and parsley together with the garlic, then season with salt and pepper. Spread the mixture over each bap.

Cut 8 large, round slices from the tomatoes and place a slice on each bap. Season lightly and sprinkle with the herbs, then the cheese.

Cook the pizzas under a hot grill, until the cheese melts and browns slightly. Halve and stone the olives and use them to top the pizzas along with thin strips of anchovy fillets. Sprinkle with chives and serve.

Spicy Roasted Herb Nuts

In lieu of fresh herbs, use dried ones (1/2 teaspoon of each). Store cool
nuts airtight up to 3 days at room temperature or 1 month in the freezer.

1-1/2 cups almonds
1-1/2 cups walnuts
1 cup hazelnuts
1 cup pecan halves
1/2 cup maple syrup
1/4 teaspoon cayenne

1-1/2 teaspoons, each, chopped fresh:
oregano leaves
thyme
rosemary leaves
savory leaves
marjoram

3 tablespoons olive oil
1 teaspoon kosher flake salt

Mix nuts with herbs, syrup and oil. Spread in a 10"x15" sheet pan, and sprinkle with the salt. Bake in a 300° oven, stirring occasionally, until the liquid evaporates, and nuts are golden under the skin (break some open to test), about 45 minutes. Let cool; taste and add a little more salt if desired. (Note: I have never
added more salt.)

We are having Santa Fe Soup, Velvetta Cheese Dip and Tortilla Chips, Vegetable, Meat, Cheese Tray, Chicken Salad with Hawaii Bread, and Pizza. We will probably drink Lemonade or Sodas.

A seven layer taco dip, homemade guacamole, hummus with pita chips. Oh, so yummy!!!!
Drink, beer of course. Get Corona with limes. Hits the spot with munchies like these.

Here is the easiest and best chili dip.

1 can of Hormel turkey chili with beans
1 pkg of cream cheese

Combined both in a pot
stir on med heat until both are well mix and hot.
serve with tortilla chips

My favorite that I've hooked many on(speaking as a west coaster,used to Mexican food)
1 lb hamburger ,browned
1 link of Mexican Chorizo mixed in
1 large can of a brand name chili no beans,
1 lb of velveta cheese
a couple Jalapenos or Serrano peppers minced up
Dump this all in your "Crock Pot" and simmer all day 'till game time.Serve with Restaurant style (not Doritos) Tortilla chips.

Cocktail weiners in your favorite barbeque sauce, heated up in a crock pot, is super easy and is always a hit at parties.

Something else simple to make in a small crock pot is Velveta cheese, a can of Rotel tomatoes, and if you want, crumbled, cooked sausage. Just mix it in the crock pot and use it as a dip with tortilla chips. And, with the invention of crock pot bags, cleanup would be super simple.

Hot wings with bleu cheese or ranch dressing. Hot dogs rolled in a puff pastry and cooked, stuffed mushrooms, pineapple and ham with a toothpick, vegetable and cheese platter, meatballs (italian, swedish,sweet and sour) chicken fingers.

At my house we usually do beer because its mostly men. I will of couse have soda on hand as well. As far as food, I always do chicken wings, meatballs and some dips. BLT dip is always a hug hit as well as 7 layer taco dip.

Pot of Chili in bread bowls, with shredded chedder cheese and dab of sour cream, ICE COLD BEER, nacho chips to dip in the chili, lil smokies in a slow cooker with 1 cup of mustard, and 1 cup grape jelly and let simmer on low till jelly melts and smokies heated through. Finger rolls with tuna, onions relish mayonaise, egg salad with sliced green olives little bit of spicey brown mustard and mayonaise and a cold cut platter with basket of rolls and let them make their own with squeeze bottles of mayonaise and mustard. Big hit with our party every year!
