I am trying to make a "healthier" version of my favorite sugar cookies. I've managed to cut the amount of sugar and used a mix of real eggs and egg substitute, but how can I cut the amount of butter? The recipie calls for 1.25 cups. Is there anything else I can use?

Also, does anyone have a good low-fat cookie recipie that they would share?

In alot of baking recipes you can replace up to half of the butter with unsweetened applesauce, mashed bannana, pureed prunes, anything like that. Applesauce would be best, you wouldn't really taste it. I would use 3/4 cups butter and half a cup applesauce.

since you are already making fruit based bread, just a bit more of what you already got. I do it all the time with banana bread. My recipe calls for 3 bananas and 1/2 cup butter. I use 1/4 cup fat (or less)and another banana. Works fine. I would do that in your pumpkin and banana breads.
