UFO - A lot of prophecy, yes, is in the Old Testament...but some is in the New Testament as well (such as that which the Angel told Mary for example). I admit, I would have to research all the prophecy to tell you were all of it is. Alas, I am not a scripture memorizer, but rely heavily on E-Sword (a free Bible program).
It is not lost on me that prophecy may have been added "at a later date"...but because I am a Christian by Faith, I believe by Faith in the prophecies as well.

This is a good point. I guess I have never noticed that. Paul could be speaking of some early testimony of what happened to Christ that was already accepted by the Corinthian community. I am reflecting and studying Jesus quotation though.
Isaiah 53 seems to be possibly speaking of a Messiah that would have to suffer but about rising from the dead is not in Isa. 53.\
Ps. 16:10 could also be a reference as someone said above to the fact that Jesus would see no decay.
Perhaps the 3rd day Jesus does not mean to teach that is what Scripture says but that Scripture says that he will die and come back to life. The reason he mentions the 3rd day is because that is the reality of when it happened.
Another possiblity that I am less ready to accept is perhaps Jesus is referring to some writings that had occured during the intertestamental period. The greek word for "scriptures" is simply writings. So Jesus may be speaking of a Jewish writing that occured in the intertestmental period. The most natural understanding of the term "writings" here though seems to be the accepted Hebrew Bible at the time this was written.
Another possiblity is that the author of Luke was referring to a writing of Paul. The gospels came after many of the epistles. SO the author added this phrase to validfy what had happened to Jesus. And again I don't readily accept this conclusion as well.

Look at the sacrifices in the old testament, a lamb, a ram, always the first of the flock (firstborn as Christ), without spot, without blemish (like Christ), no bones were to be broken in the sacrifice (like Christ), the blood was to be spilled (like Christ), the sacrifice was a covering for sins (like Christ). It is almost impossible to miss the whole law of the old testament sacrfices as being a type of Christ's sacrifice.

I disagree. The predictions are in the NT, and they're are many in the OT. I'm sorry, but I don't have a bible with me to show you them. You can get a bible with a concordance, and look up all the prophecies of Jesus, it'll show you exactly where they're at. I wish I could help you more. Best of luck to you.

UFO great question and worthy of an answer.
At this time, I don't believe it was OT Bible prophecy. The resurrection is just NT.
Jesus prophesied this and Paul is just giving the history/writing about it.
A close friend ask me to look at Isa 53:10. This may not be what your looking for.
I will continue to look at this for the next few days.
