How do you know you are either? If you don't know that your mother was jewish, you can't be Yisra'el or Kohen.

Remember, you are a Jew only if your mother is Jewish. However, you inherit the tribe from your father. If your mother was Jewish, then you need to ask your father if he was Levite, Kohen, or Israelite. There are birth records - look up your father's lineage. Find what you can, and then see an observant rabbi to get help.
If your mother was not Jewish, and you have made a kosher conversion, you are an Israelite. If your mother was not Jewish, and you did
not convert Halachically, then you are none of the above, you are one of the nations (a non-Jew)

unless you have records of your birth parents proving that they were jewish, you are assumed not to be and would have to go through the conversion process. as for being a kohen, you would need to have even more solid family records.
