I want to do something different with my chicken tonight. I don't want to do a casserole... maybe a marinate or sauce? Also, does anyone know if red wine vinegar can be cleverly used? I don't remember why I even bought the bottle in the first place and don't know how it can be used? Thanks!

There are lots of things you can do with red wine vinegar!! It is usually mixed with olive oil and some spices and used as a yummy salad dressing. You can also use the red wine vinegar to cook your chicken.

Saute your chicken in a fry pan with some olive oil and red onions. Once the chicken is completely cooked, remove from the pan and set aside. Sprinkle some flour over the chicken drippings and onions (not alot but just enough to cover the drippings). Add 1 - 2 cups of red wine vinegar to the pan, stirring constantly with the burner set on high heat. Continue stirring the mixture until it thickens up and starts to boil. Once it boils reduce the heat and season with a little salt and pepper. Return chicken to the mixture. Simmer in the sauce on low heat approximately 15 minutes. Serve with your favorite steamed veggies and a nice loaf of bread. Enjoy!

this is fabulous I don't get to make it often enough because my son hates mushrooms, but when he is out we have it
Chicken Marsala
Ingredients


1/4 cup flour
1/4 tsp salt
1/8 tsp freshly ground, black pepper
1/2 teaspoon dried oregano
4 chicken breasts, boned, skinless
4 Tbsp olive oil
1/2 cup Marsala wine
1 cup sliced mushrooms
1/2 cup chicken stock (or 1/4 cup cooking sherry)
1/2 lemon
Directions


Mix together the flour, salt, oregano, and pepper.
Pound the chicken breasts gently (with the flat side of your meat mallet).
Roll the chicken in this until well coated.
On medium-high, heat up the olive oil and brown the chicken on both sides. Then put chicken onto a plate. (An option is to keep the chicken int he microwave at 10% power for five minutes.)
Pour wine into the oil and warm. Mix in the mushrooms, chicken stock and juice of the lemon. Turn the chicken over to get it well coated with the sauce. Simmer for 10 minutes. (If you cooked the chicken in two batches, put all the chicken back in the skillet before you add the Marsala.)
Add in chicken and cook covered another 10 minutes.
Note: Serve with a simple pasta dish such as fettucini with butter and parmesan cheese.

Here's my basic recipe for boneless skinless chicken breasts. You can tailor the spices and sauce to your individual taste and needs.

Coat the bottom of a pan with your favorite cooking oil. Heat until shimmering. If your chicken breasts are very thick, cover them with some plastic wrap and pound them out a bit so they won't take so long to cook. They don't have to be extremely thin...about 1/2-1 inch is good. Dredge chicken in flour and then place in pan. Cook until just brown on each side. Set chicken aside.

Whisk in enough flour to make a thin paste (you can use the leftover flour you dredged the chicken in). Deglaze the bits in the bottom of the pan with some white wine or chicken broth. Add a bit more chicken broth until you have a thin sauce (thinner than however you want your final sauce, as you will reduce this). Season your sauce to taste (more on this in a minute). Add the chicken back in and let it simmer until the sauce is reduced and the chicken is done...about 10 minutes. Plate the chicken and drizzle sauce over it. Garnish with freshly chopped herbs, green onions, or whatever else you like (or nothing).

Some seasoning ideas (one, some, or none of these; I've used just seasoning salt and it's been good)
- poultry seasoning
- lemon or lime juice
- capers
- fresh sage
- pesto sauce (I add this in at the very end; you don't really want it to simmer)
- chipotle chili powder

HOT ITALIAN CHICKEN SANDWICHES

1. Ingredients4 (4 ounce) boneless, skinless chicken breast halves
1/2 (6 ounce) package SHAKE 'N BAKE Original Chicken Seasoned Coating Mix
1/2 cup spaghetti sauce
3/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
4 crusty buns, split, toasted

2. Cooking Directions
Preheat oven to 400 degrees F. Coat chicken in coating mix as directed on package. Place on foil-covered baking sheet.
Bake 20 min. or until cooked through. Top with sauce and cheese. Bake an additional 5 min. or until cheese melts.
Fill buns with chicken.
Yield: 4 servings (Serving size: 4 sandwiches)

Try allrecipes.com - on there I picked up a good recipe which calls for a whole chicken or parts, but I use the boneless breasts. It's called chicken marbella I think. It uses olives, prunes (you can use plums I think too) and other good stuff. It's very "european" .

I first tried this from a deli and then searched for the recipe.

It does use red wine vinegar

CHICKEN PARMESAN

1 cup italian breadcrumbs
2 Tbsp flour
1/2 tsp red pepper
2 boneless chicken breasts
2 egg whites, beaten
1 Tbsp olive oil
Tomato Sauce
1 cup shredded mozzarella
1/4 cup freshly grated Parmesan cheese

TOMATO SAUCE:
1/2 small onion, chopped
2 garlic cloves, minced
1 Tbsp olive oil
14 oz can diced tomatoes with basil, garlic and oregano
1/4 cup RED WINE
1/2 tsp red pepper
1/2 tsp salt
1/4 cup chopped fresh basil

Mix breadcrumbs, flour and red pepper in bowl. Pound chicken to 1/4 inch thickness, using rolling pin. Dip chicken in egg whites and coat with breadcrumbs. Dip again in eggs and again in breadcrumbs. Cook chicken in hot oil over medium heat 2-4 minutes per side. Place in lightly greased 8 inch square baking dish. Top with tomato sauce and cheese. Bake at 350 for two minutes. Serve with spaghetti and extra sauce on side

Tomato Sauce: Saute onion and garlic in hot oil over medium heat 5-7 minutes. Add tomatoes, wine and red pepper; simmer 20 minutes. Add salt and basil and simmer 20 minutes more.

I don't know about the vinegar - I only use it for salad dressings. Sorry.

What about a Chicken Cacciatore

Chicken
1 lg. bell pepper
1 lg. onion
1 can diced tomato
1 jar tomato sauce
1 jar mushrooms
hotsauce to taste

I usually make this in the crock pot, but my mother makes it on the stove.

Brown off the chicken, onion, and bell pepper. Add the diced tomato, tomato sauce and mushrooms. Simmer till chicken is cooked. Season to taste.

Serve over rice.

This is my favorite chicken recipe.
In Ziploc bag or large bowl add equal amounts of bread crumbs an Parmesan cheese.( about 1/2 cup for 4 pieces of chicken)
sprinkle salt pepper and garlic over chicken , place meat in bag or bowl and generously cover chicken. Place in heated non stick pan with enough olive oil to cover pan. Let cook over med high heat until browned on both sides..Don't flip over till browned on one side. This chicken is good with any vegetables, or a good salad..its done in like 10 minutes.

Easy chicken parmesean

place chicken in a baking dish, caver in marinara. Sprinkle on parmesean and mozzererlla cheese. Bake for 30 minutes at 350. I serve with it spaghetti and garlic bread.
