My grandmother used to add a couple of spoonfulls of sour cream to her pie crust. Once she put it on the pie, she would then brush it over with an egg wash and then unsalted, melted butter. The sour cream gave her pie crusts the most wonderful flavor.

If you replace all lbut 2 tablespoons of shortnig/lard with browned butter it tastes a bit liike shortbread but still has the texture of pastry.
To brown butter just put it in a small saucepan and melt it on medium heat then heat it until it is light brown(colour of brown sugar) and smells like shortbread. You have to be careful because if it's not brow enough you won't get the falvour but you can also burn it. Put it in the fridge until it is hard (half hour-45 min)
BTW if will still be flakey, the flakeyness just comes from cutting the butter properly.

Better Homes and Gardens oil pastry
Lower saturated fat and cholesterol. Without losing the flavor or flakiness.
2 cups all purpose flour ( I never sift)
1 1/12 teaspoons salt
1/2 cup of canola oil
5 tablespoons COLD water
blend salt and flour
add oil and mix to pea size granules
add( ice) water All of it/5 TBS
knead gently
Roll out it is flaky every time.
For perfect golden color use beaten egg yellow and water brush on before baking

Ground up English Walnuts...
and never use your hands for mixing the crust, that lets the shortening and flour intermingle, you want them to stay separated to keep the crust flaky

Once the pie is filled and the top is on, brush the top with milk and sprinkle a little cinnamon/sugar mixture on top.

I saw on Emeril that there has to be lard(or shortening) in the crust if you want to get a nice flaky crust

Try adding a tablespoon of vinegar to the pastry dough
will make it crisp.
