The custom of proposing on one knee hearkens back to the days of knighthood and chivalry when it was customary for a knight to dip his knee in a show of servitude to his mistress and his master. The knight would kneel before before a tournament and wait for "his" lady to toss him her ribbon or colors, as an indication of her favor.

Because it is part of a traditon and respect. Some women do the same thing to men. It is quite awkward.

Chivalry

Tradition left over from the days of chivalry, and because it's romantic.

It used to be that a knight or vassal knelt to the noble Lord or Lady that he served in order to show fealty and loyalty - it was a sign that he was submissive and the other had power to command him.

In kneeling to the woman he wants to marry, a man is showing her that he wants to be her "knight," and showing that he honors her and wants to serve her as his lady wife in marriage.
