Here's a recipe that my BF and I love. It calls for Kielbasa, but you can swap out Polish sausage just as easy.
Kielbasa Tortellini Alfredo
saute some chopped onion, red bell pepper, and slices of sausage(about 1/2 pound worth) in some olive oil until sausage is browned. Add a jar of Alfredo pasta sauce( I always thin with a bit of white wine, and stir in extra parmesan). Add in a chopped, seeded tomato. Simmer until everything is well heated.
Meanwhile, boil the pasta(frozen tortellini). When it's done, stir it into your sauce

A couple of different and easy ways that my family likes to enjoy polish sausge (other than on a bun) is to slice up your polish sausage into bite size pieces, add a couple of cans of green beans (do not drain the juice), add a can of diced tomatoes (drained - the ones flavored with garlic and olive oil are really great in this recipe) and slice up some red potatoes. Season with salt, pepper, garlic & onion powder. Drizzle some olive oil over the mixture and mix everything together thoroughly. Bake at 350 degrees until the potatoes and sausage are cooked. Serve.
Another way to prepare it would be to once again slice your polish sausage into bite size pieces. Slice up a head of cabbage (whatever your preference size is) and put into a pan of boiling water and cook. Do the same with a package of egg noodles. Once the noodles and cabbage are completely cooked, toss together with the sausage and season with salt, pepper, garlic powder and Hungarian Paprika. Bake at 350 until the sausage is cooked through.
I'm sorry I didn't give you complete measurements. I have a bad habit of just throwing stuff in a pot of seasoning it to my liking. Hope these help you out.

Any chance you have some Sourkraut?
A family favorite are my "Lazy Pirogi's" - or "Lazy P's". Real simple, and it's good as either a side dish, or a full meal - and is HIGHLY adjustable.
Serves 10-12 as side 6-8 as meal
1.5 lbs Polish Sausage - I only used smoked, never fresh.
1 lb Rotini pasta
1 large jar Sauerkraut
1 large onion
1/2 lb butter
salt and pepper to taste
caraway seed (optional)
Cook pasta as per instructions on box.
Slice the sausage in small disks and saute in butter they pick up some color.
Drain sauerkraut - reserving liquid
slice onion into thin slices or large dice, saute in butter till translucent.
Add drained sauerkraut, Saute till kraut is soft.
Add Salt, pepper, caraway seed and reserved kraut liquid to taste.
Mix onion/kraut/butter, pasta and sausage together, place in crock-pot to keep warm.
** I know it's a lot of butter, but the pasta absorbs a lot of it, and it does feed a few people. I've tried this with olive oil, and margerines, and the taste isn't as good

What are the chances you have a can of black beans or black-eyed peas in the cupboard?
I love to make "Hoppin' John", which is essentially cajun style beans & rice.
Cut the sausage into discs, and brown it, along with the onions and spices. I love to toss in Tabasco sauce, but anything spicy & tangy can work.
Cook the rice in a separate pan.
When the rice is ready, toss the chopped tomatoes and beans into the sausage pan to get warm. Toss in the rice, and you're done!

You could cook the sausage in olive oil with sliced onions and chopped tomatoes.,add spices you like. Cook up your pasta as directed drain and add butter spoon sausage mixture over the pasta. Steamed carrots on the side.....

we usually make our polish sausage with sliced onions, and cut up potatoes. put a little dab of cooking oil in the bottom of the frying pan. add your sausage, potatoes, and onions and cook until the potatoes are tender . salt and pepper to taste

I find it is really good when chopped up and cooked with onions, peppers, garlic and potatoes. I boil the potatoes ahead of time, then just throw them all in a skillet. It is fast, cheap, and good.
